The idea behind it all is simple: don't throw the bread away.🥖🍞🥖🍞 The complicated one is everything else. Yes, because it is not so straightforward (and immediate) to transform bread into beer but that is what Biova, a start-up born a few months before the pandemic in Veneto, does.🥖🍺🥖🍺🥖🍞🍺🍺
From the market analysis, carried out with Cerved, it emerges in particular that 85% of the bread purchased in Italy is fresh artisan bread and on average 1,5,000,000 tons are produced per year.
The idea of creating beer starting from bread, came in 2018 when Emanuela Barbano and Franco Dipietro, the two founders of the start-up, found themselves in the van of a non-profit organization with 150kg of bread that nobody wanted. They wondered how it could be reused, avoiding throwing it away, they found that it could be used to make beer. As happens with Toast Ale, an English beer. In fact, in recent months, the company has signed an agreement with the Confcommercio Milano bakers association: Biova has begun to collect part of the dry bread to transform it into beer. In total about 5 quintals were collected which were used to produce the beers that are currently on the shelves of the same bakers who had kneaded and baked the bread.😍❤️😍❤️😍❤️
