Just off the beach in the Maldives, the shallow seagrass beds are the quiet engine of the reef. They feed the turtles, shelter juvenile fish, and give rays a place to rest, half-hidden in the blades.

Snorkel out slowly and you will often find one gliding below you, completely unbothered. It is the sort of encounter that never makes the brochure, yet it tends to be the one guests talk about most.

At several of our Maldives resorts the house reef starts a few fin-kicks off the sand, so there is no boat, no course and no plan required.

The Standard, Maldives by Hyatt took over Huruvalhi island in the Raa Atoll and brought its 'expect the unexpected' streak with it. The inherited villas, all with private pools, are unusually large for this level, and the pink inflatable ring and colour-shifting mood lighting keep things playful rather than polished.

Look past the brand quirks and Huruvalhi is genuinely lovely. A natural beach rings the island, with no groynes or breakwaters needed, the house reef comes in close (especially off the Overwater Ocean Villas), and the wide lagoon suits swimmers and snorkellers alike.

Dining has moved on nicely, too, with the Maldivian overwater restaurant Guduguda and the new Mediterranean Onda among the highlights.

High on the escarpment above Lake Manyara, the Serena Safari Lodge looks out over the lake and the Rift Valley plains. The 67 rooms are set in circular rondavels, each with its own verandah and a view over the water.

It is a natural stop on the Northern Safari Circuit: Ngorongoro is close, the Serengeti a couple of hours on, and the national park below is known for its flamingos and tree-climbing lions. Days end well here, with a swim in the infinity pool and dinner on the cliff top.

Lily Beach sits in the South East Ari Atoll, reached by a 25-minute seaplane from Male and then a short boat hop. The house reef is a few metres off the sand, the diving in South Ari is excellent, and the Platinum Plan covers dining, premium drinks and excursions. A great choice for families and keen snorkellers.

Zanzibar works on two levels at once. Days on the water: warm shallows, a dhow drifting past at dusk, and a reef a short swim offshore. Then Stone Town, where carved doors, cool stone corridors and spice-scented alleys reward a slow afternoon on foot.

Most guests pair it with a Tanzania safari: dust and wildlife first, then the Indian Ocean to recover.

Safari at its best is about being close: lions at first light, a leopard draped along a branch above the track, elephants moving through the bush in the last of the light. Saadiyat Island's St Regis does relaxed and active in equal measure. A superb stretch of private beach, unhurried Mediterranean architecture, and every room with its own balcony looking over either the sea or the Gary Player designed golf course next door. Five swimming pools, the Iridium Spa, tennis and squash, and a genuinely strong choice of restaurants. One of Abu Dhabi's most satisfying stays, and one we know well and recommend with real confidence.
