Easter Sunday = the traditional lamb roast 🐑✨

One of my absolute favourites is this herb-crusted rack of lamb - especially on Easter Sunday when the kitchen at Crossing Cottage comes alive with the smells of rosemary, garlic and lemon.

It’s elegant, juicy, packed with flavour… and honestly, not as hard as it looks 👀
Perfect for a family roast or to impress your dinner guests.

🍽️ The kitchen here is made for cooking up a stunning Sunday roast to feed the people you love.

Herb-Crusted Rack of Lamb
Elegant, juicy, and packed with flavour – perfect for special occasions.

🛒 Ingredients
Lamb:

1 or 2 racks of lamb, frenched
2 tbsp Dijon mustard
2 tbsp olive oil
Salt & pepper

Herb Crust:
1 cup fresh breadcrumbs
2 garlic cloves
2 tbsp fresh rosemary (chopped)
2 tbsp fresh thyme (chopped)
Zest of 1 lemon
2 tbsp olive oil
Salt to taste

👩‍🍳 Instructions
1. Prep the Lamb
Bring lamb to room temp (30 mins out of fridge)
Pat dry, season generously
Sear on all sides in a hot pan with olive oil (2 mins per side)
Let rest
2. Make the Herb Crust
Blitz breadcrumbs, garlic, rosemary, thyme, lemon zest, olive oil & salt
Aim for a chunky texture

3. Coat with Mustard
Brush seared lamb all over with Dijon mustard

4. Add the Herb Crust
Press herb mixture onto mustard-coated lamb firmly

Place bone-side down on a tray

5. Roast
Preheat oven to 200°C / 400°F
Roast for 20–25 mins for pink
Internal temp: 57–60°C

Rest 10 mins before slicing

6. Serve with:
Roasted potatoes, buttered greens, or Mediterranean couscous
Optional drizzle: red wine jus or balsamic glaze.
