Serves 10 — perfect for sharing as our House sleeps 10 Guests
Ingredients
For the fruity filling:
850g damsons, halved and stones removed
850g cooking apples, peeled, cored and sliced
175g caster sugar
1½ tsp ground cinnamon
2 tbsp cornflour
3 tbsp water
For the golden crumble topping:
250g plain flour
165g cold butter, cubed
125g light brown sugar
85g rolled Whites oats
¾ tsp ground cinnamon
A pinch of salt
To serve:
Warm vanilla custard
Method
1️⃣ Prepare the fruit: Place the apples and damsons in a large ovenproof dish. Add the caster sugar, cinnamon, cornflour and water, and gently mix together.
2️⃣ Make the crumble: Rub the cold butter into the flour with your fingertips until the mixture resembles breadcrumbs.
3️⃣ Add the flavour: Stir in the brown sugar, oats, cinnamon and salt.
4️⃣ Assemble: Scatter the crumble topping evenly over the fruit.
5️⃣ Bake: Cook at 180°C fan / 200°C conventional / Gas Mark 6 for 40–45 minutes, until golden and bubbling.
6️⃣ Serve and enjoy: Leave to stand for 10 minutes, then serve warm with lashings of creamy vanilla custard.
✨ Our orchard tip: If your damsons are a little tart, add a little extra sugar. A teaspoon of vanilla extract or some freshly grated orange zest makes this autumn favourite even more special!
