Our home baked goods are made with flour supplied by the Mill. The area is a walkers and cyclists paradise. Jacksons coppice is an adjacent ancient woodland and a place of great beauty, both being maintained by the Staffordshire Wildlife Trust. We are happy to recommend local pubs and restaurants if you wish. Getting around
You will need your own transport to make the most of our rural location

There are very difficult aspects if lockdown for so many. The hardest thing for me has been the postponing of my daughter Eleanor and Seans wedding which should have been on the 23rd of this month. Other than this I feel so blessed locking down at Brook House.

Learning how to make the bakers marks on my home made sour dough bread. Makes it pretty and the slashes release tension in the skin of the dough allowing for a better oven rebound rise.....bet you didnt think their was so much to it🤣🤓. PS. First go at croissants. Not bad but can do better. Will use these in a brioche type bread and butter pudding😋

First decent crop of morello cherries since I planted the trees 5 years ago. Clearly the blackbirds and thrushes saw them as their own as I got a right telling off when they flew in to continue their feasting only to find my ugly mug in the tree. The picking, de-stoning and processing felt like a sword of damocles as I am holding the fort here alone at present , but 4kg stoned with the help of Andrei and Victoria...a great opportunity for mindfulness and conversation. A late night flush of enthusiasm resulted in cherry jam, dried cherries, glace cherries started and a kilo in the freezer.
Same again next week!
Do check in at Brook House B&B to share in the bounty.

I blame my sister Beryl Forbes. About 6 years ago she bought me a book on artisan bread making and I have barely bought any bread since then. Yes it takes time, energy and love but the smiles on guests faces at breakfast make it all worth while. This is my current ‘usual’ weekly offering of our own white sourdough and multi seed wholewheat.
Thanks as always to Charlie and David Howell at Offley Brook watermill just 100 yards upstream for their amazing flour.

Any good recipes for gluten free bread are welcome as I buy the normal stuff in the supermarket and I would like to offer something a little more joyful. ....I await your suggestions
