As such, Greece is the birthplace of democracy, Western philosophy, the Olympic Games, Western literature, historiography, political science, major scientific and mathematical principles, and Western drama, including both tragedy and comedy. The cultural and technological achievements of Greece have greatly influenced the world, having been imparted to the East through Alexander the Great's conquests, and to the West via incorporation into the Roman Empire and subsequent Byzantine Empire. The modern Greek identity was shaped by the Greek Orthodox Church, which further transmitted Greek traditions to the wider Orthodox World. Greece's rich legacy is also reflected by its 17 UNESCO World Heritage Sites, among the most in Europe and the world. Greece is a democratic and developed country with an advanced high-income economy, a high quality of life and a very high standard of living. All three stages of the stone age (Paleolithic, Mesolithic, and Neolithic) are represented in Greece, for example in the Franchthi Cave. Neolithic settlements in Greece, dating from the 7th millennium BC, are the oldest in Europe by several centuries, as Greece lies on the route via which farming spread from the Near East to Europe. Greece is home to the first advanced civilizations in Europe and is considered the birthplace of Western civilization, beginning with the Cycladic civilization on the islands of the Aegean Sea at around 3200 BC, the Minoan civilization in Crete (2700–1500 BC), and then the Mycenaean civilization on the mainland (1900–1100 BC). These civilizations possessed writing, the Minoans writing in an undeciphered script known as Linear A, and the Mycenaeans in Linear B, an early form of Greek. The Mycenaeans gradually absorbed the Minoans, but collapsed violently around 1200 BC, during a time of regional upheaval known as the Bronze Age collapse. This ushered in a period known as the Greek Dark Ages, from which written records are absent. The end of the Dark Ages is traditionally dated to 776 BC, the year of the first Olympic Games held originally in Athens, Greece.

This dish is a legend! Creamy, juicy and
absolutely delicious.. Greek moussaka
(mousaka) is one of the most popular dishes in Greece, served in almost every tavern and prepared in every household on special occasions and big family meals and for good reason! To prepare a traditional Greek Moussaka recipe, luscious layers of juicy minced beef (or lamb) are cooked in a tomato based sauce, layered with sweet eggplants and creamy béchamel sauce and baked together until golden perfection.. Simply irresistible! With this step-by-step traditional Greek Moussaka recipe you can easily recreate this traditional delight from scratch! So go ahead, indulge yourself to this little sin.. This easy to follow Greek moussaka recipe never fails to impress and is always a crowd pleaser. The essence of this traditional Greek moussaka recipe can be summarised in three key stages:
preparing the meat filling, preparing the
béchamel sauce and cooking the eggplants.

Greek Moussaka recipe – Prepare the meat sauce....

The traditional Greek moussaka recipe calls for either minced lamb or a mix of lamb and beef. But if you can’t handle its strong flavour and prefer a lighter version try substituting with good quality minced beed or veal. To prepare
the meat sauce for this moussaka recipe, the ground beef is sautéed in olive oil, flavoured with onions and garlic and then simmered in
red wine and tomato sauce. The aromatic herbs and spices used in the traditional moussaka recipe pe*****te the meat and give a really characteristic taste and smell which permeates the house, once put in the oven! Let the sauce simmer for a while to allow the flavours to mingle.

▶Base ingredients:
➡6 eggplants
➡vegetable oil (for frying the eggplants)...

▶For the meat sauce
➡750g minced beef or lamb
(26 ounces)
➡2 red onions (chopped)
➡2 cloves of garlic (chopped)
➡1 tin chopped tomatoes
(400g/ 14 oz.)
➡2 tbsp tomato puree
➡1 teaspoon sugar
➡1 glass of red wine
➡sea salt and freshly
ground black pepper
➡1 bay leaf
➡a pinch of cinnamon or
one cinnamon stick
➡1/4 of a cup olive oil

▶For the béchamel sauce
➡875ml milk (3 and 1/2 cups)
➡100g butter (3.5 ounces)
➡100g flour (3.5 ounces)
➡a pinch of nutmeg
➡2 egg yolks
➡100g Parmigiano-
➡Reggiano or Kefalotyri (3.5 ounces)

To prepare this Greek moussaka recipe, begin by preparing the eggplants. Remove the stalks from the eggplants and cut them into slices, 1 cm thick. Season with salt and
place in a colander for about half an hour.

1. Rinse the eggplants with
plenty of water and
squeeze with your
hands, to get rid of the
excessive water. Pat
them dry and fry in
plenty of oil, until nicely
colored. Place the fried
eggplants on some
paper, in order to absorb
the oil. (For a lighter
version of the traditional
Greek moussaka try
drizzling the aubergines
with some olive oil and
bake them for 20
minutes instead of frying
them).
2. Prepare the meat sauce
for the moussaka. Heat
a large pan to medium -
high heat and add the
olive oil. Stir in the
chopped onions and
sauté, until softened and
slightly colored. Stir in
the garlic, tomato puree
and the mince breaking
it up with a wooden
spoon and sauté. Pour in
the red wine and wait to
evaporate. Add the
tinned tomatoes, the
sugar, a pinch of
cinnamon, 1 bay leaf
and a good pinch of salt
and pepper. Bring to the
boil, turn the heat down
and simmer with the lid
on for about 30 minutes,
until most of the juices
have evaporated.
3. Prepare the béchamel
sauce for the moussaka.
Use a large pan to melt
some butter over low-
medium heat. Add the
flour whisking
continuously to make a
paste. Add warmed milk
in a steady stream; keep
whisking in order to
prevent your sauce from
getting lumpy. If the
sauce still needs to
thicken, boil over low
heat while continuing to
stir. Remove the pan
from the stove and stir
in the egg yolks, salt,
pepper, a pinch of
nutmeg and the grated
cheese. Whisk quickly, in
order to prevent the
eggs from turning an
omelette!
4. Assemble the moussaka.
For this
moussaka recipe you
will need a large baking
dish, approx. 20*30 cm).
Butter the bottom and
sides of the pan and
layer the eggplants. Pour
in the meat sauce and
even out. Add a second
layer of eggplants, top
with the béchamel sauce
and smooth out with a
spatula.
5. Sprinkle with grated
cheese and bake the
musaka in preheated
oven at 180-200C for
about 60 minutes, until
crust turns light golden
brown. Even though it
will be really hard.. you
should wait for the
moussaka to cool down
for a while before
cutting into pieces.
6. Serve the Moussaka
with a nice refreshing
Greek feta salad and
enjoy over a glass of
wine!

Perfect Lenten Chocolate Brownies!

( This Mediterranean inspired Lenten chocolate brownie recipe is based on a secret ingredient: ! Tahini replaces butter and milk in many
Greek Lenten desserts and it is the perfect match for chocolate. It will give a slightly nutty taste and an incredible chewy texture to your brownies, which is exactly what they need!
Besides helping with texture, tahini is also well known for its numerous health benefits. Tahini is packed with essential vitamins and minerals; is an excellent source of copper, manganese, healthy fatty acids, omega-3 and omega-6 and also a very good source of calcium, magnesium, iron, phosphorus, vitamin B1, zinc, molybdenum, selenium, and dietary fibre. It helps promote cardiovascular and brain health, lower cholesterol and prevent high blood pressure. Tahini also helps tone up your blood vessels, which enhances blood circulation and has great antioxidant properties.)

Ingredients
150g tahini (5.3 0z.);
150g orange juice
(approx. 3 oranges / 5.3oz.);
50g cognac (1.8 oz.);
200g dark couverture
chocolate (7 oz.);
150g all purpose flour (5.3 oz.);
1/2 tsp baking powder;
150g icing sugar (5.3 oz.);
100g walnuts, whole or
roughly chopped (3.5 oz.)
zest of 1 orange...

To prepare these
delicious Lenten
chocolate brownies, start
by melting half of the
chocolate (100g). To
melt the chocolate it is
best to use a bain-marie
(or double boiler), a
piece of equipment
used to heat the
chocolate gently and
gradually to fixed
temperatures so that it
doesn’t burn. If you
don’t have a Bain -
marie, break the
chocolate into small
pieces and drop into a
heatproof bowl. Set the
bowl over a small
saucepan about a
quarter full with hot
water and place the
bowl on top so that it
rests on the rim of the
pan (the bowl should not
to touch the water).
Place the pan, with the
bowl on top, over low
heat until the chocolate
has melted, whilst
stirring occasionally. Set
aside for 5 minutes to
cool down.
1. In a large bowl add the
tahini, orange juice and
cognac and whisk to
combine. Pour in the
melted chocolate and
whisk again until
incorporated. Add the
flour, the baking powder
and sugar and blend
with a spatula, folding
gently the mixture with
light circular movements
from the bottom up. You
don’t want to overwork
the mixture. Add the
chopped walnuts and the
rest of the chocolate
(cut in pieces) and
blend.
2. Preheat the oven to
180C. Line one square
baking tin (approx.
22*22cm) with
parchment paper and
grease with vegetable
oil. Dust with cocoa
powder and get rid of
the excess cocoa. Tip in
the brownie mixture in
an even layer.
3. Bake the brownies in
preheated oven for
about 25 minutes, until
they have formed a
shiny and dry slightly
cracked layer but are
still moist underneath
(be careful not to over
bake them). Set aside to
cool down for about
20-30 minutes.
4. Serve these delicious
Lenten chocolate
brownies, while still
warm with melted
couverture and fresh
strawberries. Enjoy!

A traditional Cypriot Flaouna
recipe (Flaounes), for you to
prepare this delicious cypriot
sweet & savoury desert to perfection!

Preparing this traditional Flaouna recipe is relatively simple – but there are a couple of points to look out for. Firstly make sure you prepare your filling from the day before and let it rest in the fridge . This will allow your flaouna recipe filling to soak in all the delicious spices giving them their distinctive flavour. The second point to note is not to overwork the flaouna dough as you do not want the gluten to develop and become bread-like. And finally its all about getting the original flaouna ingredients –
mahlab, mastic and the delicious flaouna recipe cheese, all of which you can find at your local Greek/Cypriot deli or online. Amazon stocks both mastic and mahlab and if you can’t find the cheese you can substitute with some grated plain haloumi and mild yellow cheese, like cheddar. And don’t forget – the sesame seeds are always sprinkled on the outside! So go ahead, give this delicious recipe a try and don’t forget to post your comments and feedback below!

for the
Flauna Dough:
500g plain flour,
2 eggs,
1 tsp baking powder,
1 teaspoon Mahlab ground to a fine powder,
1 teaspoon Mastic ground to a fine powder,
1 teaspoon of sugar,
125g butter, melted,
1 sachet easy bake yeast,
a pinch of salt,
A dash of warm milk for
kneading (about 80ml),
60ml warm water...

Ingredients for the Flaounes filling and
glazing:
500g Flaounas cheese or
alternatively 250g haloumi
and 250g mild cheddar,
1/4 cup semolina,
2 eggs,
1 tsp baking powder,
1 tsp mahlab,
1 tsp mastic,
1 tsp chopped fresh mint,
120g raisins,
1 egg, whisked (for the glazing),
1/2 cups sesame seeds (for the glazing)...

:
In order to have the best texture for your flaouna, it is best to prepare the
filling from the night before or at least 4-5 hours before baking. This would allow the cheese filling to dry out
and be able to absorb
more of the “moisture”
from the liquid flaouna
ingredients.

1- Start off by grating the
cheese as fine as you
possibly can. Add the
beaten eggs, the raisins,
the mint, the mastic,
mahlab and the semolina
and mix thoroughly.
Cover it with a cloth and
place in the fridge
overnight or for at least
4-5 hours before baking.

2- Next off start preparing
the dough. The dough is
more like a shortbread
and not very bread-y
hence be careful not
to overwork the dough
as your flaouna will be a
bit doughy. In a large
bowl sift the flour, add
the salt, baking powder,
the mahlab, mastic and
mix thoroughly.

3- Add the liquid
ingredients to your
flaouna recipe mixture.
Add the oil and eggs and
gently mix the flaouna
dough with your fingers.
Dissolve the yeast in the
warm water with the
sugar, pour into the
dough and then add the
warm milk. Be careful
for your water and milk
to be only lukewarm and
not hot as they will kill
your yeast!

4- Continue kneading the
dough for a few minutes
until the texture is firm
but not bread-like. If the
dough is too wet add a
little more flour but be
careful not to overdo it
as you don’t want the
flaouna to have a bread-
y texture. Cover the
dough mix with some
cling film and let it rise
for 1-2 hours or until it
has almost doubled in
size.

5- Now its time to start
assembling your flaouna!
Get the filling mixture
out of the fridge and add
the remaining mixture
ingredients. Mix
thoroughly and set it
aside. Pour the flaouna
dough out of the bowl
and roll out in thin
sheets. Cut into 12 by
12 cm rectangles, about
5 inches in each
dimension. Sprinkle the
sesame seeds on a
small plate with
approximately the same
size as the flaouna
dough rectangles.

6- Glaze the outer side of
the flaouna dough with
the whisked eggs and
press it down on the
sesame seeds. That will
ensure that the seeds
are firmly embedded in
the dough. Grab a
handful of the cheese
filling and form a ball.
Place in the centre of
the dough (sesame
seeds facing outwards),
glaze the edges with a
little more whisked egg
and fold, pinching the
corners together to form
the flaouna shape.

7- Once all your flaouna are
shaped, place them on anbaking tray lined with grease proof paper, let.them rise for about 30-45 minutes and then.bake in a pre-heated oven at 200C for about 40 minutes, or until golden brown.
