🇬🇷 Gemista
Colorful bell peppers stuffed with a savory mix of rice, herbs, and vegetables, baked in a fragrant tomato sauce.
Ingredients
✦ 4 large bell peppers (red, green, yellow)
✦ 1 cup uncooked rice
✦ 1 onion, finely chopped
✦ 2 tomatoes, grated
✦ ¼ cup olive oil
✦ 2 tbsp fresh parsley, chopped
✦ 1 tsp dried oregano
✦ Salt and pepper to taste
✦ Tomato sauce (for baking)
Instructions
1️⃣ Slice off the tops of the peppers and remove seeds. Set aside.
2️⃣ In a skillet, sauté onion in olive oil. Add grated tomatoes, rice, herbs, salt, and pepper. Cook for 5 minutes.
3️⃣ Stuff peppers with the mixture and place in a baking dish.
4️⃣ Pour tomato sauce and a little water around them.
5️⃣ Cover and bake at 375°F (190°C) for 1 hour, until peppers are soft and filling is cooked.
