🐟 So… who’s getting into the kitchen this week? 🇬🇷
There are dishes you hear about —
and there are dishes that make you want to try them yourself.
On March 25 in Greece,
bakaliaros is exactly that kind of dish.

I went straight to one of the most trusted names in Greek cuisine:
Akis Petretzikis —
probably the most well-known and loved chef in Greece today.
His recipes are not just popular —
they’re precise and reliable.
I combined his approach
with the accuracy of Real Greek Recipes —
to give you a simple, clear path to a great result.
✨ A few small tips that make a big difference:
🧂 Soaking — the foundation
Salted cod is very… salty.
It needs to be soaked in cold water for 24–48 hours,
with the water changed every few hours.
It might sound like a detail —
but it changes everything.
🍺 A light twist in the batter
One of Akis’ nicest touches:
very cold beer + a small pinch of sugar.
The result?
A beautiful golden color and great crispiness.
🧻 Drying before frying
Before dipping in the batter —
make sure the fish is properly dry.
A small step,
but one that really affects the texture.
🧄 And the skordalia
This is not just a side.
It’s what brings everything together.
Garlic, potatoes, olive oil —
and a bold flavor that completes the dish.

On Greek Independence Day,
