Moutai in cocktails, made them the TAILS way.

For OPEN by HE.R HE.R 鶴 on 18 October, we brought our custom work into the crowd and poured four cocktails with Moutai as the base: using our signature TALKER (Mixed Plum), EXPLOIT (Wampee), ROSES (Rose Hibiscus) from the archive, and the first taste of Spicy Watermelon.

The music, the faces, the first sips — thank you to everyone who stopped by and made this night with us.

Under the same full moon, we remember who matters.

Mid-Autumn is a season of gathering — of thanking the people who’ve stood by us, and drawing the ones we love a little closer.

After a long wait, something rare is finally in the bottle.

Meet PEARL. Taiwan Maqaw Oolong Gin.

High in Taiwan’s misty mountains grows Maqaw — the “black pearl of the forest,” a tiny wild spice treasured for generations by Indigenous communities.

Most of Hong Kong has never tasted it. We’re the only ones here who’ve put it in a bottle.

Those little dark berries carry something you won’t expect from their size — lemon, lemongrass, ginger, a gentle flicker of pepper.

In PEARL, they open bright and warm, woven through smooth oolong and crisp gin, with a whisper of sea salt at the edge — mountain meeting ocean, the way Taiwan itself does.

Serve it cold. Over plenty of ice for a bright, clean finish — or top with soda when you want it to sparkle. Either way, it’s a first sip most people around you won’t have had before.

Meet PEARL. Taiwan Maqaw Oolong Gin.

Tomorrow night, a room full of voices takes the stage — months of practice, one shot to be heard. And when the nerves settle and the applause lands, there’ll be a TAILS cocktail waiting to raise.

Take it iced. Take it easy.
It’s Sunday, and there’s nowhere you have to be.

The sun’s found its way across the floor. The morning was slow on purpose. And somewhere around noon, a cold drink just makes sense — not to chase anything, just to sit inside the afternoon a little longer.

A drink in daylight hits differently than one at night. Night is momentum — the crowd, the noise, the drink disappearing into all of it. Daytime is the reverse. You’re clear, you’re unhurried, and the glass in your hand is the whole point instead of the background. You actually taste it. You actually notice you’re relaxing.

And no — a good Sunday doesn’t have to mean completely dry. It’s not about switching off, and it’s definitely not about a second and a third. A good track and a good cocktail do the same thing — they set the tempo, loosen the air, and suddenly people are in it together.

當 TUTMusic Singing Academy 遇上 TAILS，我們想做的，是一夜屬於感官的相遇。

8 月 29 日，我們攜手呈獻《THE MIXOLOGY 聲·色特調》—— 爵士人聲遇上中西樂器：古琴、古箏、二胡、洞簫，與小提琴、大提琴，在中環藝穗會的夜裡層層交疊。你手中，是我們為這一夜特別調製的雞尾酒。

音樂總監 Oscar Kam（甘仔）帶領星級導師與專業演奏家同台，TUT 特調歌手現場獻唱。

一邊是旋律，一邊是味道 —— 讓它們在同一個晚上，交織成一段只屬於這夜的故事。

一口，一段旅程。

When TUT Singing Academy meets TAILS, what we wanted to make was a night for all the senses.

On August 29, we’re bringing you THE MIXOLOGY together — a Jazz journey in every sip. Jazz vocals meet Chinese and Western instruments — guqin, guzheng, erhu, dongxiao, alongside violin and cello — layering through the night at The Fringe Club, Central. In your hand, a cocktail we crafted just for the evening.

Led by Music Director Oscar Kam, with star mentors, professional musicians, and TUT’s own vocalists live on stage.

Melody on one side, flavour on the other — folding into one story that belongs only to this night.

One sip, one journey.

Hold it up to the light.

That amber-orange? Nothing was added to make it look that way. It’s wampee and black tea, steeped until the colour comes out this real. No artificial colouring — the drink earns its own shade.

A slow afternoon. Sun across the chair. The paper open, in no hurry to be finished.

EXPLOIT is made for exactly this pace — citrus-bright on the first sip, then black tea and a quiet bitterness that only turn up if you slow down enough to notice them.

Wampee was never the obvious choice. That’s the point. It’s for the ones who taste past the surface — and look a little closer.

陽光下那橙褐色，不是加出來的。只是黃皮與紅茶，慢慢浸泡到顏色自然這麼實在。沒有人工色素 —— 這杯酒的顏色，是它自己釀出來的。

黃皮從來不是最順理成章的選擇，它留給那些願意嚐得比表面更深、也看得比表面更近的人。
