While the “jugo” wind blows outside and spring has suddenly slipped back into winter, it’s the perfect day to start baking “sirnica”. ☁️🌬️
I’ve written before about this seemingly simple cake, a symbol of Easter that is essential on every table here in Lumbarda. Local housewives usually bake them several times, perfecting the craft to ensure they are ideal for the holiday. It’s a blend of flour, milk, and yeast, enriched with the scents of lemon and orange. 🍋🍊
Sometimes the yeast fails and it doesn’t rise, which makes for a very sad day. You also have to know your oven perfectly, because a sirnica must never be overbaked. I cannot describe the scent that fills our kitchens these days... and once they are done, the ultimate question is: has it risen properly? 🍞✨
I hope that by sharing our “sweet worries,” I’ve brightened your day and taken your mind off the much bigger concerns currently troubling the world.
