In Irish whiskey production, the cut points - the precise moments during distillation when the foreshots (heads) and feints (tails) are separated from the heart - are carefully chosen to shape the whiskey’s character. Clonakilty Distilleries heart cut tends to be wider as a result of the clarity and refinement of the spirit, due in no small part to the long fermentation times which produces less unwanted compounds.

How to mix it:

- 50ml Minke Gin
- 150ml premium tonic water
- Garnish with mint or a slice of lime

You might’ve seen our team’s attempt to mix an “Old Fashioned” without a recipe. Don’t worry, we won’t make you do the same. Today, we’re here to present the real deal. The ingredients you need for an Old Fashioned:

- 60ml (2oz) of a Clonakilty Whiskey of your choice (Galley Head is great for this one!)
- 1/2 tbsp (1/4 oz) simple syrup
- 2-3 dashes of bitters
- Orange
- Maraschino cherry (optional)

Method : Stir whiskey, simple syrup, and bitters with ice in a mixing glass for 20–30 seconds, then strain into a rocks glass and garnish with an expressed orange peel (and an optional Marachino cherry).
