📚 Behind the Scenes at Irish Food Trail 📚

This week, we’re sharing some of the books that have shaped the way we think about Irish food, history, and storytelling on our tours.

🇮🇪 *An Irish Food Story* by JP McMahon — a deep dive into the question: what is Irish food?

🍽️ *The Old Spot Cookbook* — contemporary Irish cooking rooted in tradition.

🫒 *Jibrin* — celebrating the relationship between Ireland and Palestine through food and shared stories.

🥖 *Bake* by Graham Herterich — because Irish baking is about so much more than soda bread.

🍺 *Filthy Queens* — exploring the fascinating history of beer in Ireland.

Every tour starts with curiosity, conversation, and a love of the stories behind what we eat. These are just a few of the books that inspire us along the way.

Hot days in Dublin call for ice cream stops 🍦☀️

Our latest treat took us to Murphy’s Ice Cream, where the queue was long but absolutely worth the wait. The staff kept everyone smiling with generous samples while moving the line along at lightning speed 👏

We went for the Honeycomb Caramel and Di**le Sea Salt flavours — rich, creamy, and packed with that famous Murphy’s flavour. The Di**le Sea Salt had the perfect sweet-salty balance, while the Honeycomb Caramel was pure comfort in a cone.

A must-stop in Dublin when the sun decides to make an appearance 🇮🇪

Welcome to part 2 of Lara’s favourite Irish cheeses 🧀
Today’s spotlight is on Gubbeen - a rich and delicious cow’s milk cheese made on a 250 acre coastal farm in West Cork owned by Tom & Giana Ferguson. The farm’s herd graze on Atlantic - kissed pastures, giving the cheese its incredible character and flavour.
What I love most about Gubbeen is how beautifully it captures the true meaning of farm-to-fork produce - everything is crafted with care, right there on the farm! And as if the cheese wasn’t enough…they also make their own incredible Gubbeen Chorizo!

“Bang Bang” was a man called Thomas Dudley, a famous and much-loved Dublin eccentric from the 1950s–60s. He became part of Dublin folklore for staging pretend cowboy shoot-outs on buses, using a brass key as his gun. People would happily play along with him. He was Dublin’s favourite sniper. There is a cafe in phibsbrough which is dedicated to Bang Bang!!

Welcome to our four part series on Irish cheese where Lara showcases some of her favourite Irish cheeses. Part 1 of 4.🧀
This week we are looking at Cashel Blue cheese which is a true taste of Irish craftsmanship. Made with organic cow’s milk and free from artificial colours and flavours, Cashel Blue is proof that simple, natural ingredients make the best cheese.
Founded in 1984, Cashel Blue was the very first Irish farmhouse blue cheese which is handcrafted using traditional methods and naturally formed blue mould cultures for its rich, distinctive flavour.
For over 40 years, this second-generation family business has stayed true to artisanal cheesemaking patience, skill, and time creating every wheel by hand.

Comment your favourite type of cheese in the comment section we’d love to hear.🧀❤️

Foodie Friday in Dublin 🇮🇪🍀

This week we visited — one of our favourite traditional spots in the city. If you’re looking for classic Irish comfort food done properly, this place absolutely delivers.

From hearty shepherd’s pie to their famous boxty pancakes filled with Irish steak, chicken, and Gubbeen chorizo from Cork, every dish felt like a proper taste of Ireland 🤤

Our intern Casey — who’s heading back to California today after an amazing few months with us — chose the blue cheese boxty dumplings, and honestly… they looked unreal. We absolutely loved having her on the team and she’ll be seriously missed ❤️

And for dessert? Their modern take on an ice cream sandwich was ridiculously good. Safe to say the table was very happy by the end of the meal 🍨

Definitely one to add to your Dublin food list. DublinEats IrelandTravel FoodTok

Saw THIS at Dublin’s museum… and no, it’s not a rock. 👀🧈
Just ten minutes on foot from where I’m currently interning at Flavour Trails is Ireland’s National Museum of Archaeology, where I discovered one of the country’s most curious food traditions on display — Bog Butter. ☘️
Ireland is celebrated today for its rich dairy, farmhouse cheeses, fresh breads, and incredible food culture. And of course, many know and love Kerrygold butter — but Ireland’s connection to quality ingredients is far from a recent culinary trend.
For centuries, traditions evolved through preservation, craftsmanship, and making the most of the land. What once meant burying butter in peat bogs has transformed into the modern plates of mouthwatering flavours enjoyed today.
Good ingredients never go out of style.
The story of Irish flavour continues as I discover new tastes, histories, and hidden stories across Ireland with Flavour Trails.
