Back to reality…

There are moments when you can feel a country turning a page.

Living in Israel, I have witnessed difficult times, uncertainty, and resilience. But over the past few weeks, I have also started to see something I have missed for a long time: visitors returning.

More international airlines are resuming flights to Tel Aviv. Hotels are welcoming guests again. Travelers are once again walking through the streets of Jerusalem, watching the sunset over the Mediterranean, and discovering the incredible diversity of this small but extraordinary country.

As someone who has lived in Israel for over twenty years and dedicated her career to helping people discover it, this means a great deal to me.

Because Israel is far more than the headlines.

It is the silence of the Judean Desert at dawn.

It is the energy of Tel Aviv’s innovation ecosystem.

It is the history carved into the stones of Jerusalem.

It is conversations over coffee, vibrant markets, breathtaking landscapes, and encounters with people from every background imaginable.

For many months, countless travelers postponed their plans, waiting for the right moment.

Today, that moment may be closer than many realize.

With international air connections steadily returning and confidence growing, Israel is becoming increasingly accessible once again for pilgrims, business delegations, cultural travelers, families, and curious explorers.

Hawaij, is a variety of Yemeni ground spice mixtures used primarily for soups and Yemeni coffee.
The basic mixture for soup is also used in stews, curry-style dishes, rice and vegetable dishes, and even as a barbecue rub. It is made from cumin, black pepper, turmeric and cardamom. More elaborate versions may include ground cloves, caraway, nutmeg, saffron, coriander, fenugreek and ground dried onions. The Adeni version is made of cumin, black pepper, cardamom and coriander.
The mixture for coffee is made from aniseeds, fennel seeds, ginger and cardamom. Although it is primarily used in brewing coffee, it is also used in desserts, cakes and slow-cooked meat dishes.
In Aden, the mixture is made with ginger, cardamom, cloves, and cinnamon for black coffee, and when used for tea excludes the ginger.
In Israel, hawaij is used extensively by Yemenite Jews and its use has spread more widely into Israeli cuisine as a result.

Do you know Zaatar?
Zaatar is a middle eastern spice used in every aspect of the local cuisine. Made of a mix of spices (sesame seeds, dried sumac, salt to name a few). it is mostly used on pitas, flat breads, and Lebanese cheese. This is ideal to add some flavor to your salads. My personal tip? Mix it with butter or oil to season your bbq meat! One drop of zaatar in your dish will bring you back to Israel in one bite! Enjoy!
