Since I hail from Rajasthan and landed in the family of Kashmiris, home-cooked traditonal recipes have always excited the foodie in me.
Here comes another one 'Coconut bhindi', which is a simple yet flavourful version of this humble vegetable. You just need some generous amount of sauteed onions while you make bhindi with basic spices and then top it with fresh grated and fried coconut, to make it super delectable.
Trust me it won't leave your taste buds easily. We made this with garden fresh organic bhindi and it was divine.

The first time I truly experienced the joy of eating Chhole Bhature was at the Nathu's Sunder Nagar, many years ago. Being one of the most flavourful and tempting recipes from Punjab, you'll agree that a mere brain wave to have chhole bathure, can excite you and brighten your mood.
I am sure most of us have some or the other food memory related to it !
Frankly, its not a rocket science to make bathuras at home and you can create this fancy looking ever delicious recipe, without much ado!

Most of us already know how to make chhole, so I am not getting there. Just follow these simple steps to make soft and yummy bathure (for 2-3 people) :

Take 2 cups white flour, 1/4 cup suji for crunchiness, 1/2 tsp baking powder to raise the flour, 1/4 cup curd for softness, 2 tsp oil, 1 tsp sugar, salt to taste. Mix everything together and make a dough which is not too soft and not too hard.

NOT TO MISS: Check out the 2nd image. Keep the dough in sun for 4 hours. It makes all the difference and helps in raising the dough perfectly.

Keep a deep bottomed kadhai or pan ready for frying the bathuras. Now get the dough, soften it a bit more with your hand, make it cylindrical and seperate small balls to make bathuras of them. Use the rolling pin to flatten one of the dough balls evenly, making it slightly longish from sides and then fry in piping hot oil. Fry slightly golden brown from both the sides. Repeat the process with rest of the dough.

Serve soft,crunchy and fluffy bathuras with chhole, onions, pickle and some green chillies !!! .

🥭 is pure love and the best thing to happen in summers. So why not have its most delish version... Mango ice-cream🍦

Keeping it easy and simple with just 4 ingredients, sometimes thats exactly where the yumness lies.

Note the recipe now !!!
1 . Take 4-5 mangoes... I took safeda here
2 . Whisk a 200 ml tetra pack of cream... Preferebly low fat cow cream
3 . Half a tin of condensed milk
4 . Vanilla extract

Puree the mangoes and add half a tin of condensed milk. Whisk the cream on side and add a tbsp of Vanilla extract. Now blend the puree with the cream and check the sweetness. If required add some honey [optional] and freeze the mix for 3hours. Take the mix out, Churn it and freeze it again for another 5 hours.
Your bowl of mangolicious goodness is ready !

Let’s have Pasta...it’s a saturday!!

Weekends will remain special no matter we stay indoors or indulge outdoors.
Simply spaghetti it is today...Bon Appetit !!

Take mid size 10 tomatoes for 3-4 people, boil them or air fry them, de-skin and deseed. Alongside, boil water in a pot & add some salt and oil. Once the water is at rolling boil, add spaghetti and cook it till Al-Dante. Remove the spaghetti from the pot, pour it in another container, add some olive oil and toss it so that it doesn’t stick. Preserve some pasta water for later use.
Now roughly chop the tomato pulp and your tomato concasse (sauce base)is ready.
Take a pan, add some olive oil or butter with 5-6 crushed garlic cloves and add the tomato concasse in that. Cook for a few minutes, add salt, pepper, chilli flakes/ powder and pasta seasoning.
Now add your spaghetti and toss it. Pasta is ready, you must use the pasta water now to enhance the taste and make it a bit more sauce consistency. Garnish with basil leaves and some grated Parmesan, if available.

Serve this sumptuous 🍝 this Saturday, to your family 🙂 .

Since slow cooking has taken precedence in our kitchens during these times, vegetable Handvo- a Gujarati recipe, can surely be on our breakfast menu for a super healthy, tasty and a filling start of the day !

It’s usually made with soaked lentils and vegetables and fermented for few hours but this instant Handvo has Rawa and veggies, takes lesser time to cook and is equally delish !
