Dudunj / Khatta🥗
दुरुंज is a traditional pahadi snack made during winters in Himachal🏔️.
It is mostly consumed on a sunny day while you soak the sunlight during winters🥶.
It's a mix of spicy, sour and sweet taste all at the same time.
How it is made?
-You would need Dadunj {Main fruit}, Coriander leaves, Mint leaves, Green Chillies, Salt, Spices(like Garam masala, Jeera Powder} Green Garlic, Salt, jaggery, Coal {for smoky flavours}
Preparation:
-First we would need to prepare the paste.
-First you would need traditional सिल बट्टा(grinding stone)/Danda K***a
-This would be used to grind the spices (Mixer/Grinder can be used) as this will give authentic taste mix with the stone and wood. This enhances the aroma and taste of every spice.
-Rub/Grind all the ingredients Except the fruit and it should turn out to be green paste.
-Than peel the thick rind off the dadunj fruit/Galgal and cut the fleshy inside into small pieces.
-Now mix the paste and fruit pieces in an open bowl.
-Now you can taste and add the required or unbalanced ingredients to balance the spicy sweet and tangy taste.
-Now the main thing is the smoky traditional flavour also called as JHOKA
Heat a small piece of charcoal/coal until its burning hot.
* Place the hot charcoal into the mixture.
* Pour a few drops of mustard oil over the charcoal to make it sizzle and smoke.
* Cover the bowl with a plate for a minute or two to infuse the mixture with a smoky aroma.
Remove the charcoal piece before serving.
Its done.
It's ready to serve it immediately before it starts to taste bitter.
