The Bedouin Barbecue! 'Zarb' from Amman

‘Zarb’ is one of the beautiful and delicious treasures of Bedouin culture. For centuries Bedouins in the whole Arabian Peninsula cooked their food underground in earth ovens. This way of cooking does not require much equipment which was important as Bedouin travelled a lot as they roamed the desert in search of water and pastures. Zarb is a mix of meat like lamb and chicken, rice, onions and carrots. All the ingredients are placed in a square hole in the ground, which is filled with flaming hot coals. The hole is then covered with a few layers of blankets to hold in the heat and finally sand is covered over the oven.

After a few hours, the meat and rice are all smoked, steamed, and grilled, all at the same time! End result is the meat that fall apart tender. Then it is served on a colossal community tray, rice at the bottom, a shoulder of lamb or pieces of chicken and all the vegetables on top. Could feel the different air on Amman streets – with the soft, earthy, slightly charred, simple but tangy Arabic flavours.

7) Kathi Roll from Kolkata

Kolkata's flagship street food is actually a compulsion wrapped in flatbreads! Kathi Kabab Roll ('Kathi' means simple bamboo stick skewers) was essentially paratha & kebab in British Kolkata, Nizam's Restaurant started wrapping it up to make it take-away sort of for the cinema audiences of Esplanade neighbourhood, who used to jump into Nizam's at the brief interval and had to run back unfinished! And gradually its popularity overpowered Nizam's original Paratha-Kebab, and we got a real handy stuff, much much before McDonald's arrival!

6) Juju Dhau : the ‘King Curd’ from Bhaktapur, Nepal

A must-have in all Nepali feasts and celebrations, Juju Dhau is a sweetened curd (no, not a ‘yogurt’!) that essentially comes from Bhaktapur, the ancient Kingdom of Nepal. Juju Dhau literally means "king of curd" in Newari language. While cow's milk is used to make regular curd, fresh buffalo milk (bhaisi) is traditionally used for Juju Dhau, resulting in a richer taste and texture. To make Juju Dhau, the milk is boiled, sweetened, mixed with culture, and poured into decorative, natural red clay pot called maato ko kataaro. It is then placed in a warm area, on a bed of paddy husks (the papery covering of rice grains), covered with another kataaro on top, and wrapped in several thick cotton blankets to maintain a warm temperature while the yogurt sets. Because the clay pots are porous, the excess liquid from the yogurt slowly evaporates, leaving a delicious, thick, smooth and creamy yogurt. It is then transported and sold in the market in the same clay pots. A visit to Bhaktapur is not complete without sampling a bowl of Juju Dhau.

3) Nasi Goreng from Jakarta, Indonesia

This Indonesian version of fried rice is the country’s unofficial national dish. It is believed that the tradition of frying rice in Indonesia came from the Chinese culture, when the trade between the two countries started to develop. But When the Chinese reached the new land, they had to adjust the ingredients to local commodities, resulting in countless variations of Nasi Goreng. As it is sinful to waste food according to the tradition, Nasi Goreng is usually cooked with leftover food for breakfast.

Peranakan cuisine or Nyonya cuisine comes from the Peranakans, descendants of early Chinese migrants who settled in Penang, Malacca, Singapore and Indonesia, inter-marrying with local Malays. Laksa is a spicy noodle soup popular in the Peranakan cuisine of Southeast Asia & almost IDENTICAL WITH PENANG – the ‘Food Capital of Malaysia’.
Laksa consists of thick wheat noodles or rice vermicelli with chicken, prawn or fish, served in spicy soup based on either rich and spicy curry coconut milk or on sour asam (tamarind or gelugur).
