Seoul for pork belly you grill yourself at the table. Jeonju for the bibimbap the city actually invented. Daegu for fried chicken and cold beer, where the habit started. Busan for a seed-stuffed hotteok at BIFF Square. Jeju for abalone the haenyeo dived for that morning.

Most Korea itineraries stop at Seoul and a day trip. That's the version where you eat well once and assume that's the ceiling.
