Kicking off the 2026 travel itinerary! Posting this as I’m literally en route to the airport with Dramamine in hand ✈️

I’m headed to 📍Porto, Portugal 🇵🇹 then Copenhagen, Denmark 🇩🇰 for work conferences! But I’m making the most of it and extending the front and back half of the trip to explore with my oldest travel buddy, my dad!

Then in October, I’m headed to Tokyo, Japan 🇯🇵 with Max. Again for a work conference, but making the most of it together!

Stay tuned! Because there’s still 9 more months to add more trips to the year! 🗓️

Food tours are a must-do on any international trip for us 🌎! Tasting the best a city has to offer with a local guide beats anything we could do on our own! 🙌

Today’s menu in Reykjavik🍴

1. Bleikja – Arctic Char with cherry tomatoes, almonds, honey, & butter |

2. Plokkfiskur – Cod, potatoes, onion, garlic, celery, cream, white wine, black pepper, Béarnaise sauce, and rye bread |

3. Lamb & flatbread – Slow cooked lamb, Icelandic flatbread from the Westfjords, carrot purée, pickled red onions, and horseradish sauce + Arctic char & blini – Lightly cured arctic charr, chickpea flatbread, horseradish sauce, roe, crispy lentils, yuzu elderflower dressing | .rvk

4 & 5. Icelandic Hotdog – lamb hot dog topped with ketchup, pylsusinnep (sweet mustard), crispy fried onions, raw onions, and creamy remoulade sauce |

6. Hákarl – fermented shark + Viking Gylltur beer (not pictured)|

7. Íslensk kjötsúpa – traditional Icelandic lamb soup |

8. Rye bread ice cream with cream & rhubarb syrup |

9. Dubai chocolate + blueberry skyr gelato |

Any fish moving forward is going to pale in comparison to today’s arctic char & plokkfiskur 🐟 Have you experienced a dish like that? One that will never leave your mind? 😋

Well, WE do! But “we” didn’t fit the pun 😉

From geysers bursting with steam to tomatoes bursting with flavor at a long-awaited lunch reservation at (made by my tomato-hating husband on his OWN volition that did not disappoint‼️ - we’re talking best tomato soup we’ve ever had in our 30+ years of life) to 20k+ steps across the breath-taking views of Þingvellir, Iceland never ceases to amaze us 🤩
