Once a tourist asked me: "Do I really have to order both a primo and a secondo in Italy?"

Only if you're starving, otherwise, it's not a must.

À la carte, order whatever you want, even just an appetizer.

One exception: dessert. A few restaurants require a meal before they'll seat you just for dessert, but it's worth asking.

Among locals, it's normal to order only one main dish. Two full courses is ambitious eating.

With friends, share instead: one or two dishes per person in the middle, an easy way to taste half the menu without overordering.

Set menus are different: two or more courses included, and skipping one won't lower the price.

Before refrigerators existed, staying cool in summer wasn’t so simple. People had to get creative, and that’s how locals came up with the idea of collecting snow and using it to make the very first, rudimentary versions of granita.

A clever way to survive the Sicilian heat.

Today the recipe has evolved, of course, but the love for this dessert hasn’t changed one bit.

A stop that smells like fish.

When you reach the fish market in the morning , even at 7am, the day’s catch is already on display: fresh, on ice, still carrying the scent of the sea.

But if 7am sounds early to you, remember that for the fishermen it’s practically lunchtime: their day starts at 3 am, when they head out to sea.

A Tourist Asked Me: "I know pastrami is an Italian dish, where can I find it in Catania?”

I knew pastrami. I'd even tried it a couple of times, in ethnic restaurants.
But its origins? No idea.
The only thing I was sure of was that it wasn't Italian.
So that question caught me completely off guard.

So I did some research. And what I found surprised me.
Pastrami is originally Romanian , prepared by Jewish communities using goose breast, spiced and cured.

When Romanian Jewish immigrants arrived in the United States, goose was expensive. Beef brisket was cheaper. So the recipe changed.
In 1887, a butcher in New York made the first pastrami sandwich using a Romanian friend's recipe.
It was so popular he turned his entire butcher shop into a restaurant.

A question I couldn't answer in Catania ended up teaching me something I never expected to learn.

That's what I love about this job.
Every tourist brings a little piece of their world. And sometimes, the guide learns too.

When Vera was a kid, her mom would buy cannoli and make her wait hours before eating them.
“So they get softer,” she’d say.

Vera spent half her life thinking cannoli were supposed to taste like soggy tubes. She had no idea about the legendary crunch everyone raves about.

Then one day, way too late, someone told her the truth: you eat cannoli immediately.

Fresh, crispy, zero waiting.

Vera felt so betrayed that she stopped talking to her mom. Permanently. Some crimes can’t be forgiven.
All those lost years of crunch she’d never get back.
