La raccolta delle olive in autunno è un momento di convivialità e festa a Villa Ugo.

Segue poi la molitura "a freddo" delle olive, dopo la quale l'olio viene lasciato decantare naturalmente in vasi di terracotta fino alla primavera, quando viene imbottigliato.
