Wine pairings are subjective, but we think you can’t go wrong by pairing the niche vintage, Orcia DOC (produced in the Val d'Orcia) with local salamis and cheese from nearby Pienza. The fruity cherry notes accentuate the spicy aroma, and the dry palate with its tannic finish makes it the perfect accompaniment for salty meats and cheese.
