Based on what you’re looking for — great food, beautiful scenery, and a relaxed pace — the countryside will give you a much more authentic and memorable experience. Properties like Rosewood, Castello di Casole, or Borgo Santo Pietro are destinations in themselves.

My suggestion would be:
4 nights in the countryside + 1 day trip to Florence

That way, you can enjoy slow mornings, long lunches, wine tastings, and still visit Florence without the stress of staying in the city.
