At the Chef’s Counter – Pesto Edition

Forget the blender—this is how real pesto is made.
At the chef’s counter, Tommaso shows you every step:

💪 With a mortar and pestle (like it’s meant to be)
🌿 Only fresh Genovese basil—no shortcuts
🧄 Garlic, pine nuts, Parmigiano, pecorino, EVOO... all added in the right order, with the right technique

The secret? It’s not just the ingredients—it’s how you treat them.
Crushing, not cutting. Slow, not rushed. Pure flavor, no bitterness.

We are living historic days — Rome is immersed in an atmosphere of reflection and transition.

In this special context, we wish to keep you informed with the latest updates.

On Saturday, April 26, the Vatican Museums will be closed for the funeral of Pope Francis.

From Monday, April 28, the Sistine Chapel will remain closed until further notice due to the Conclave.

The city will be experiencing higher-than-usual attendance, especially around the Vatican.
We anticipate large crowds and increased security measures in the area.

We are in close contact with Vatican Museums authorities and will promptly share any further updates.

Our Story

FLORENCETOWN was founded by Luca Perfetto and Urbano Brini - college friends and travel enthusiasts- with the deep desire to offer unique experiences in Florence and Tuscany. After warm Spanish winter studying the evolution of the tourism industry Urbano and Luca dreamt up their own project. Together they developed innovative ideas to explore Italian Culture in a brand new way, introducing exclusive itineraries and a different approach to tourists services with a focus on quality.

Florencetown was then created and it was a quick success. The company started by offering innovative, high quality group tours and a concierge service providing high-end custom experience. Florencetown was a trailblazer for many activities that, at the time, had never been done before, including:

  • first to offer a regular bike tour of Florence (2007)

  • first to open the world famous Vasari Corridor tour to the general public (2007)
