Just outside Martina Franca, the pastures roll toward the old woods, and the herds still graze here as they have for generations. This is podolica country — the hardy cattle that gave Puglia its prized cheeses, raised on wild grass rather than closed sheds. It's this same working countryside, half farmland and half ancient forest, that makes the Valle d'Itria what it is: unspoiled, protected, alive at dusk.
We're only ten minutes from town, yet the view is all cows and sunset. Nothing staged. Just the valley doing what it's always done.
