GRIGNOLINO - THE RETURN OF THE RED WINE
Before Barolo became the wine of kings, Grignolino was the real royalty!
Bold, noble, and always on the guest list at royal feasts, it was the favorite wine of the King of Italy. But then Barolo came along and p**f - Grignolino was out.
Luckily, Enza Cavallero dug up its royal roots, which date back to the 13th century.
Grignolino may have been forgotten, but it’s ready to make a royal comeback.

Who says Christmas lunch can’t have a Pugliese twist?
Instructions:
▪️Soak the fava beans overnight, then cook in a pot of salted water until tender (about 1-2 hours)
▪️Meanwhile, sauté the garlic in olive oil, add the chicory and cook until wilted (about 10 minutes)
▪️Once when the fava beans are cooked, mash them lightly, leaving some whole for texture
▪️Combine the fava beans and chicory in a saucepan
