⚜️ BUSIATE by Chef Alessandro

⚜️ Busiate or busiati are a type of long spiral pasta, originating in the province of Trapani and typical of the Calabria and Sicily regions of Italy. They take their name from busa, the Sicilian word for the stem of Ampelodesmos mauritanicus, a local grass, which is used in preparing them and giving them their helical shape.

⚜️ The Arabic Connection: The word busiate comes from the Sicilian term busa, which directly derives from the Arabic word bus. This referred to a specific type of indigenous, thin reed or grass (Ampelodesmos mauritanicus or diss grass) that grew in Trapani’s sandy soil. The Arabs introduced dry pasta, as well as the technique of drying and shaping it, to Sicily during the 9th to 11th centuries. Local historians consider it to be the oldest handmade Sicilian pasta shape.

⚜️ Busiate is inextricably linked to Pesto alla Trapanese. This vibrant, uncooked red pesto was created by Trapani locals who adapted Genoese sailors’ traditional green pesto by adding local ingredients brought over by the Arabs, such as almonds and fresh raw tomatoes.

⚜️ Easter celebrations mark the start of the stagione for the island: a season of renewal, celebration and togetherness. Streets come alive with processions, kitchens overflow with sweets and savory feasts, and the rhythm of daily life shifts to the busy energy of spring.

⚜️ Each town in Sicily carries its own story, its own traditions, and to join these Easter celebrations is to step into a living community. Walking through Ortigia on Good Friday, the air is heavy with incense, and the ancient stones echo with the quiet footsteps of hooded confraternities. In Modica, two separate processions—one bearing the Risen Christ, the other a mourning Madonna—meet at noon in a moment known as the vasata, a symbolic kiss and embrace that marks the joy of the Resurrection. Meanwhile, in Trapani, the famous “Misteri” theatrical procession unfolds over nearly an entire day, as enormous, handcrafted statues are carried through the streets by devoted locals.
