Days 5 and 6: From Vineyards to Villas, and into the Heart of Florence
Our fifth day began with soft morning light and a farewell to Castel Monastero. Tuscany itself however, still had more to give. On the road to Florence, we wandered through the Chianti countryside, taking pauses in postcard-perfect villages like San Gusmè and Villa a Sesta.
Our first proper stop was at Tenuta di Arceno, where we tasted bold Chianti wines surrounded by rolling vineyards and oak forests. A second tasting awaited us at Vallepicciola, paired with a light lunch among sun-drenched hills.
In the afternoon, we visited Fontanelle Estate with Hotel le Fontanelle and Hotel The Clubhouse, a pair of luxury properties that perfectly blend countryside seclusion with refined comfort. Then, by early evening, we arrived at Villa La Massa —a jewel of Renaissance architecture once home to Florentine nobility. With its terraced gardens and river views, the villa feels like a living portrait. We explored its spaces before sitting down to a beautiful dinner on property.
The next morning, we turned our attention to the Renaissance mecca that is Florence. Our day began with a private Medici tour, uncovering the intrigue, power, and legacy of one of Europe’s most influential dynasties. Lunch was held at the Hotel Savoy, a Rocco Forte Hotel, blending contemporary chic with old-world charm.
In the afternoon, we explored Florence through its living craft traditions during our artisan tour. We met the hands that still shape leather, gold, and paper by centuries-old methods.
The icing on the cake: a memorable farewell dinner at Grand Hotel Minerva with tons of laughs.
The next morning brought our final goodbyes—but not before a few last conversations over cups of cappuccinos.

Days 3 and 4: A Taste of Tuscany’s Soul
We left the Eternal City behind and set out for Castel Monastero, Tuscan Retreat & Spa, which is a former medieval monastery tucked among rolling hills, cypress-lined roads, and a kind of noteworthy stillness that only Tuscany can offer. The transition from Rome’s grandeur to the serenity of the countryside was nothing short of cinematic.
On our way, we made a meaningful stop in Orvieto, a hilltop town in Umbria that feels untouched by time. We began with a wine tour and tasting , where volcanic soil meets centuries of viticulture. Then came a lunch at a local trattoria, complete with access to the city’s underground tunnels—Orvieto is known for a vast network of more than 1200 such passageways below its cobblestones. We have visited the iconic Palazzo Petrvs as well. A guided stroll through the town followed, bringing us face-to-face with ancient facades and breathtaking views across the Umbrian hills.
By late afternoon, we arrived at Castel Monastero, where a site inspection doubled as a moment of stillness and appreciation. Surrounded by vineyards and silence, this place offered exactly what we hoped for: a sense of deep connection and place. That evening, we dined at Cantina Restaurant and savoured seasonal Tuscan flavours.
The next morning we ventured into Siena and San Gimignano, two jewels of the region. We wandered the medieval towers of San Gimignano, indulging in sweet tastings and artisanal moments. Lunch in Siena at the fascinating Grand Hotel Continental Siena - Starhotels Collezione was followed by something truly special: a private opening of a Contrada museum—a rare and intimate glimpse into the soul of the Sienese Palio culture.
We returned to the monastery just in time for an unforgettable dinner at the Michelin-starred Contrada Restaurant which is located on the property.

It was our absolute pleasure to host a Grand Italy Tour for our amazing Mexican travel advisors, beginning in the Eternal City, Rome. Here’s how the days were laid out:
Days 1 and 2: An Intimate View of Rome
We decided that our starting point would be in the city that needs no introduction (and that houses our headquarters and cooking school!). Rome was our prologue, which offered glorious sunny days for us to bask and explore in.
The advisors’ first days were spent staying at Palazzo Ripetta - Relais & Châteaux, a five-star haven where the elegance of Rome’s past quietly converses with modern design. That first evening, as the sunset wove its brilliant colours in the sky, we took to the streets in golf carts, weaving through the city’s hidden corners and local food scenes. Street food snacks and aperitif drinks blended in with a lovely dinner at a local establishment.
Early the next morning, we ventured out to explore the capital’s more secretive side with a private tour of “Secret Rome” that we adore conducting, stepping into stories and spaces that most never hear or witness when they come to visit the city. Lunch brought us back to the calm and grace of Palazzo Ripetta, followed by one of the most unforgettable moments of the journey.
Thanks to our founder Marilena’s deep connections, we were granted exclusive access to St. Peter’s Basilica—a behind-the-scenes experience that allowed us to walk through hidden corridors and enter the sacred space in a way few ever do. It was reverent. It was extraordinary.
We ended the day around the table once again—but this time, cooking side by side with our resident Nonna Teresa, who carries and generously shares generations of culinary wisdom at our InRome Cooking! As flour dusted the air and stories passed between pasta dough and wine glasses, we happily noted the first two days of this Italian cultural immersion to be a success! However, this was just the beginning of what we had in store for our guests.

Kids deserve more than dragging their feet through yet another adult-centric activity while on vacation. That’s exactly why our founder, Salvatore, developed — and personally leads — many of our kid-focused tours, including our special Colosseum experience. As a father himself, he knows how to spark curiosity and spin stories that transform the ancient amphitheater into a live-action storybook.
There are no dry lectures that kids might dread. Instead, Salvatore’s tour feels more like a performance- one that conjures up the roar of cheering crowds, the presence of emperors, wild beasts, and, of course, the thrill of Roman gladiators.
He makes history stick by skipping the heavy dates and tapping into imagination- a method that often leaves kids remembering the Colosseum as a highlight of their trip (parents often write to give us this touching feedback!) And for the adults, this isn’t just a tour — it’s a heartwarming moment to watch their children truly connect with history.

In collaboration with FORA Travel Advisors Community, we recently hosted two unforgettable days of exploration through Lucca, Forte dei Marmi, and Portofino—led with care and vision by our founder, Marilena.
Day 1 brought us inland to Lucca, a Renaissance gem (away from Florence) that is encircled by its original fortification walls. With its warm, glimmering palette of yellow, terracotta, and turquoise, our walking tour in Lucca was such a visual delight! We strolled past Romanesque, Gothic and Renaissance churches, spotted some of the remaining ancient defense towers, and lingered around in streets filled with charm and history. A long seaside lunch at Bagno Dalmazia in Principe Forte dei Marmi followed; the day was then capped by a leisurely bike ride through the town’s stylish shopping district under the fresh Tuscan air.
The next day we turned toward the Ligurian coast and arrived in dazzling Portofino, where pastel houses embrace the harbor like a watercolor painting. After disembarking at the port we visited a hilltop eco-farm for an aperitivo picnic surrounded by native plants and wild, Mediterranean beauty.
Lunch at the Grand Hotel Miramare in Santa Margherita Ligure was delicious, and embellished with stunning views of the bay and the sea. A relaxed walking tour followed to close the day.
Each moment was crafted with intention and warmth—true to the spirit Marilena brings to every journey we create.

We are ecstatic to announce that we have released a cookbook through InRome Cooking!

Having spent months pouring over the pages and contents of this manuscript, we have written and designed a special artifact that crystallizes mine and Salvatore’s family and the legendary Roman restaurant of our bloodline.

Growing up in and around Ristorante Passetto, our siblingship grew stronger through fond memories of playing and later working at the establishment. With profound feelings forever attached to this family-run food community, we decided to sustain its legacy through the birth of InRome Cooking, and now through putting together this book of beloved family stories and recipes, so that their cultural dissemination can proudly continue far and beyond!

The intro has been written by our beloved Loredana Tartaglia a famous Italian Journalist and best friend of our lovely Marilena.
