Most travelers who visit Rhodes never make the crossing to Symi.
It is a small island in the Dodecanese, known for a neoclassical harbour that rises steeply from the waterfront in ochre and terracotta, for quiet bays reached only by water taxi or a short hike, and for a rhythm so unhurried it takes a day or two to fully settle into.

There is no particular agenda here. The morning belongs to the harbour. The afternoon belongs to the water. The evening belongs to a table with a view and no reason to move quickly.

In Cartaxo, in the heart of Ribatejo, one of Portugal's finest artisan cheesemakers opens his farm, his dairy, and his private restaurant to a small group of guests who believe that food is the best way to understand a place.

The aged goat's cheese alone is worth the visit. What follows, a guided tour of the farm, a lesson in traditional cheesemaking, and a long lunch prepared with everything produced on the estate, is something else entirely.
