Podere Pretaccione is a 1000 year old Tuscan building that was once the home of itinerant priests. Located in the heart of the Chianti Classico wine region, Pretaccione provides a restful, rural setting just 30 minutes from historic Siena and 10 minutes to Gaiole in Chianti, home of the L’Eroica bike race. There are terracotta floors and beamed ceilings throughout. A large swimming pool and tennis court are also available for use.

Italy’s Cured Meats Are Basically a Map You Can Eat

Walk into a salumeria in Italy and the counter can feel overwhelming at first. Prosciutto, speck, bresaola, mortadella, coppa, pancetta, guanciale, salami — they may all sit beside each other, but they are definitely not the same thing.

What makes Italian cured meats so interesting is how regional they are. Travel a few hundred kilometres and the flavour, preparation and even the part of the animal being used can completely change.

Prosciutto di Parma is delicate, slightly sweet and famous around the world, while Prosciutto di San Daniele has its own softer texture and distinctive flavour from Friuli Venezia Giulia.

Mortadella is one of Bologna’s great specialties. Forget the cheap imitation versions you may have tried elsewhere; traditional mortadella is soft, fragrant and often dotted with pistachios.

Bresaola comes from Lombardy and is completely different from most of the others because it is made from beef rather than pork. It is lean, deeply coloured and commonly served thinly sliced with rocket, Parmesan and a little olive oil.

Speck from Alto Adige combines curing with light smoking, giving it a stronger, more alpine character.

Then there is guanciale, the cured pork cheek that plays an essential role in dishes such as carbonara and amatriciana. Pancetta may look similar to visitors, but they are not interchangeable if you want the traditional flavour.

Culatello di Zibello is one of Italy’s most prized cured meats, produced in a small area of Emilia-Romagna and aged slowly until it develops an incredibly delicate flavour.

Tuscany gives us finocchiona, easily recognised by the aroma of fennel, while Calabria goes in a completely different direction with ’nduja, the fiery, spreadable salami that can transform everything from bread to pasta.

You will also find regional specialties such as coppa, soppressata, Salame Felino, Salame Napoli and ventricina, each with its own seasoning, texture and tradition.

And then there is lardo di Colonnata. It is essentially cured pork fat, which may not sound particularly exciting until you taste paper-thin slices slowly melting over warm bread.

That is the best way to explore Italian cured meats: do not just order “prosciutto.” Ask what is local.

If you are in Tuscany, try the Tuscan specialties. If you are in Emilia-Romagna, explore Parma and Bologna. In Calabria, look for the spicy options. In the mountains of the north, try speck.

Italy does not really have one charcuterie tradition.

It has dozens of them — and tasting your way through the regions is part of the fun.
