A recent drought in southern Spain has led to the remarkable re-emergence of a 7,000-year-old megalithic monument near the province of Huelva. EASY AF CREAMY VEGAN PASTA SAUCE USING TOFU!!! See the recipe below and save it for your next easy weeknight dinner :)

For the Silken Tofu Sauce:
- 1 block silken tofu or soft tofu (300g)
- 2 tbsp oil
- 1 onion, diced
- 4 cloves garlic, minced
- 2 tbsp nutritional yeast
- 2 tbsp lemon juice
- 1 tsp miso paste
- 1/2 tsp salt, divided
- More salt and pepper to taste

Other Ingredients:
- 255g dry pasta (around 3 servings), save around 1/2 cup pasta water
- Fresh parsley, chopped finely (for topping), optional
- Cashew or H**p Parmesan (recipes on my blog~)
