A recent drought in southern Spain has led to the remarkable re-emergence of a 7,000-year-old megalithic monument near the province of Huelva. This archaeological site, long hidden by water and sediment, has now been brought to light by changing environmental conditions. EASY AF CREAMY VEGAN PASTA SAUCE USING TOFU!!! See the recipe below and save it for your next easy weeknight dinner :)

For the Silken Tofu Sauce:
- 1 block silken tofu or soft tofu (300g)
- 2 tbsp oil
- 1 onion, diced
- 4 cloves garlic, minced
- 2 tbsp nutritional yeast
- 2 tbsp lemon juice
- 1 tsp miso paste
- 1/2 tsp salt, divided
- More salt and pepper to taste

Other Ingredients:
- 255g dry pasta (around 3 servings), save around 1/2 cup pasta water
- Fresh parsley, chopped finely (for topping), optional
- Cashew or H**p Parmesan (recipes on my blog~)
