Fruit of the week: Ackee

Ackee is the national fruit of Jamaica and is borne in clusters on an evergreen tree. The tree was introduced from West Africa during the 18th Century and was originally known as Akye Fufu. There are two bearing seasons between January to March and June to August.

When mature the Ackee fruit turns red, and with continuous exposure to the sun splits open. Many people enjoy this fruit at breakfast or as an entree. Consuming this fruit before it is ripe can cause (JVS) Jamaican Vomiting Syndrome which can cause a chronic malnutrition and vitamin deficiency.

Recipe: Garlic Croutons

"A very simple recipe, these croutons are good for a Caesar's Salad or any tossed green salad." — Cathy Hofmann

Original recipe makes 1 1/2 cups croutons
4 tablespoons butter
1 clove garlic, minced
3 (3/4 inch thick) slices French bread, cut into cubes
Directions
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large saute pan, melt butter over medium heat. Stir in garlic; cook and stir for 1 minute. Add bread cubes, and toss to coat. Spread on a baking sheet.
3. Bake for 15 minutes, or until crisp and dry. Check frequently to prevent burning. Cool.
