Restaurants Nostalgia :
Allow me to take you to a very dear nostalgic trip through some of the restaurants and cafes I used to visit almost daily throughout my four years studying at the AUB in Beirut .
Some of you may recognize them , some of you may be indifferent , but these were important stops in my culinary journey that stayed with me till today .
My first year as a student taught me that I had to live by a student budget and not how I used to live at home . Although my father gave me a good amount of allowance for the whole year , yet I had to manage it to satisfy my nutrition, clothing , school and fun . And I sure did a great job ( I hope so ).
I had my daily lunch in the college cafeteria . Although when I think of it now , they supplied with a variety of really good dishes. We had Malfouf , veal escalope, fried fish filet, Mloukiyyeh ,Mjaddarah on Wednesdays and Fridays, daily Hummus, daily salad, daily white beans stew , daily desserts and of course Ci******es. But we always craved other stuff.
In front of the main gate of the AUB were two spots we went to , an affordable hamburger place called UNIVERSAL and a very expensive one ( used to be a student second home in the past but not in my time ) called FAISAL . The burger place was very yummy and very filthy ( like we cared ). I did not care what kind of meat they used . It was damn good or so I thought back then . They used to serve the burger with or without cheese - the only option - on a flimsy paper plate with 1 scoop ( they used the ice cream scoop by the way ) of Russian salad ( yum ) and 1 scoop of Coke slaw loaded with Mayo. The PRIZE was that they cleaned the counter with a wet cloth and used the same to clean the grill . Let me give it to them : they threw it afterwards. Did that deter us from eating there ??? Nooooooooooo. I still miss it.
Then there was the One and Only MARROUSH. Their famous roasted shredded chicken and garlic paste toasted sandwiches with pickles are to die for . The sandwich maker used to stand behind the window overlooking the street and fill the bread with the chicken in Speedy Gonzales speed, place them in a toaster to get crunchy and flat and then smother them with the garlic paste and through two or 3 stripes of cucumber pickles and wrap them in paper. It was the best meal for me but only if I head to my dorm room right afterwards as the smell of garlic would be getting out of every pore on my skin .
Going further up , there would be Hamra street that housed many cafes/restaurants that were a regular spot for me and my friends . The WIMPY was one of many. Its red accessories and sign filled the place. We used to live sitting in the second floor , window side where we had a peaceful yet fun seating watching the hustling and bustling of the street and enjoying its famous burger . There I was introduced by the White Coffee which I thought was literally white coffee and when the aromatic hot water arrived , I thought they were so cheap serving me this drink ….. I am so ashamed to even think of this now .
In front of it across the street was MODCA cafe which was a bit more upscale and was a Sunday Lunch place for me where I enjoyed the best Sayyadiyyeh EVER. It was a good place for dates too .
In the same street , and whenever I walked it , I would smell a sweet sweet aroma that was captivating. When I followed it I reached a small shop called KHAYYAT. It sold sandwiches , ice cream … etc. I asked them what smelled so nice and they said : Belgium cake . Little did I know that it actually was freshly made Waffles. Soooo good.
In front of it was a cafe/Bar ( literally a counter that fit 10 people or less ) that was famous for its Bambania sandwich ( tuna in a big bun that they used to pile up on the bar counter ) and the Chocolate-Dede that were made to order as they smothered a bun with butter, stashed a Galaxy bar in it and toasted it to perfection… I am already dizzy . Ziad Rahbani was a regular customer there and I saw him often sitting at the far end of the counter with his Beret had and the dangling cigarette from his mouth.
And people ask me why I gained weight the first year!!!!!
نوستالجيا المطاعم:
اسمحوا لي أن آخذكم في رحلة نوستالجية غالية علي إلى بعض المطاعم والمقاهي التي كنت أزورها تقريباً يومياً طوال سنوات دراستي في الجامعة الأمريكية في بيروت.
قد يتعرف البعض منكم عليها، وقد لا يهتم البعض الآخر، لكن هذه كانت محطات مهمة في رحلة الطهو التي بقيت معي حتى اليوم.
عامي الأول كطالبة علمني أن أعيش بميزانية طالبة، وليس كما كنت أعيش في المنزل. على الرغم من أن والدي كان يعطيني مخصصات جيدة طوال العام، إلا أنه كان عليّ تدبيرها لتلبية احتياجاتي الغذائية والملابس والمدرسة والترفيه. وبالتأكيد قد قمت بعمل جيد (آمل ذلك).
كنت أتناول غذائي اليومي في كافتيريا الكلية. على الرغم من أنه عندما أفكر في الأمر الآن، كانوا يقدمون مجموعة متنوعة من الأطباق الجيدة جداً. كان لدينا ملفوف، شرائح لحم العجل، فيليه السمك المقلي، ملوخية، مجدرة يومي الأربعاء والجمعة، حمص يومي، سلطة يومية، يخنة الفاصوليا البيضاء اليومية، حلويات يومية، وبالطبع سجائر وأطباق أخرى كثيرة . لكننا كنا دائماً نتوق إلى أشياء أخرى.
أمام البوابة الرئيسية للجامعة الأمريكية في بيروت كان هناك مكانان كنا نذهب إليهما: مكان همبرجر رخيص يسمى “يونيفرسال” وآخر غالي جداً (كان في الماضي بمثابة بيت ثاني للطلاب ولكن ليس في زمننا) يسمى “فيصل”. كان مكان البرجر لذيذاً جداً وقذراً للغاية (كما لو كنا نهتم). لم أكن أهتم بنوع اللحمة التي يستخدمونها. كان طعمه رائعاً، أو هكذا كنت أظن في ذلك الوقت. كانوا يقدمون البرجر مع أو بدون جبنة - الخيار الوحيد - على طبق ورقي رقيق مع ملعقة واحدة (كانوا يستخدمون مغرفة الآيس كريم بالمناسبة) من السلطة الروسية (لذيذة) وملعقة من الكول سلو المتروس
بالمايونيز. وكانت “الجائزة” أنهم كانوا ينظفون الطاولة بقماش مبلل ثم يستخدمونها نفسها لتنظيف الشواية. دعوني أعترف لهم: كانوا يرمون القماش بعد ذلك. هل منعنا ذلك من الأكل هناك؟ لااااااا. لا زلت أفتقده.
ثم كان هناك المكان الوحيد والفريد “مروش”. شطائر الدجاج المشوي المقطع مع معجون الثوم والمخللات التي يشتهرون بها هي الأفضل على الإطلاق. كان صانع السندويشات يقف خلف النافذة المطلة على الشارع ويملأ الخبز بالدجاج بسرعة مذهلة، ثم يضعها في المحمصة لتصبح مقرمشة ومسطحة، ثم يطليها بمعجون الثوم ويضيف شريحتين أو ثلاث من المخلل ويغلفها في ورق. كانت أفضل وجبة بالنسبة لي لكن فقط إذا كنت متوجهة إلى غرفتي في السكن بعد ذلك لأن رائحة الثوم كانت تخرج من كل مسام جلدي.
وعندما تذهب إلى الأعلى قليلاً، ستجد شارع الحمرا الذي يحتوي على العديد من المقاهي والمطاعم التي كانت مكاناً معتاداً لي ولأصدقائي. كان “ويمبي” واحداً من هذه الأماكن. كانت اكسسواراته الحمراء ولافتته تملأ المكان. كنا نحب الجلوس في الطابق الثاني بجانب النافذة حيث كنا نستمتع بمشاهدة حركة الشارع بينما نستمتع بأشهى برجر. هناك تم تقديم “القهوة البيضاء” لي لأول مرة، ظننت في البداية أنها قهوة بيضاء حرفياً وعندما وصل الماء الساخن العطري، ظننت أنهم بخيلون وهم يقدمون لي هذه المشروب… أنا حقاً خجولة الآن من التفكير في ذلك.
أمام “ويمبي” عبر الشارع كان هناك مقهى “مودكا” الذي كان أكثر فخامة وكان مكان غداء يوم الأحد بالنسبة لي حيث كنت أستمتع بأفضل “صيادية” على الإطلاق. كان مكاناً جيداً أيضاً للمواعيد الغرامية.
وفي نفس الشارع، وعندما كنت أمشي فيه، كنت أستنشق رائحة حلوة جداً وجذابة. وعندما تبعت تلك الرائحة، وصلت إلى محل صغير يسمى “خيّاط”. كان يبيع السندويشات، الآيس كريم… إلخ. سألته عن تلك الرائحة اللذيذة، فقالوا: “كعك بلجيكي ". لم أكن أعلم أنه في الحقيقة كانت وافلز طازجة. كانت لذيذة جداً.
أمام هذا المحل كان هناك مقهى/بار اسمه شي اندريه (كان عبارة عن كونتر يتسع لعشرة أشخاص أو أقل) كان مشهوراً بسندويش “بمبانية” (تونة في خبز كبير كانوا يكدسونها على الكونتر) و”شوكولاتة ديدي” التي كانت تحضر عند الطلب، حيث كانوا يطليّون الخبز بالزبدة، يضعون لوح “غلاكسي” فيه ثم يُحمصونه حتى يصبح مثالياً… أنا أ اشعر بالدوار الآن. كان زياد رحباني زبوناً دائماً هناك، وقد رأيته كثيراً جالساً في الطرف البعيد من الكونتر، مرتدياً قبعة “بيريه” والسيجارة تتدلى من فمه.
ويتساءل الناس لماذا اكتسبت وزناً في السنة الأولى!!!
