その流れを今に伝える、創業70余年の「龍泉刃物」は、
世界の名だたるシェフに選ばれ、愛用されています。

鍛造、熱処理、刃研ぎ。
技の積み重ねから生まれる一振りは、材の特性を引き出しながら、刃物の可能性を広げてきました。その思想は、カトラリーへと展開し、ものづくりの領域を静かに拡張しています。

包丁の研ぎ方を学ぶ体験では、普段何気なく使っている包丁の扱い方や、砥石の正しい使い方を職人の指導のもと実践的に学ぶことができます。

Echizen forged blades carry a legacy of nearly 700 years of craftsmanship.
”Ryusen Hamono”, a blade workshop with more than 70 years of history, continues this tradition today, creating knives chosen and trusted by renowned chefs around the world.

Through forging, heat treatment, and precise sharpening, each blade is shaped by layers of accumulated skill. By drawing out the natural qualities of the materials, the workshop continues to expand the possibilities of blade-making. This philosophy has also evolved into the creation of cutlery, quietly broadening the scope of its craftsmanship.

In the knife-sharpening experience, participants learn practical techniques under the guidance of skilled artisans, including how to properly handle everyday kitchen knives and how to use sharpening stones correctly.

越前焼作家に学ぶ、ろくろによる器の造形体験

日本を代表するやきものの産地、六古窯のひとつに数えられる越前焼。
850年の時を刻み、その発祥の地・越前町に工房を構える「豊彩窯」は、親子二代で土と向き合い続けています。

鉄分を多く含む越前の土。
その素朴で力強い風合いを生かしながら、伝統と現代の暮らしに寄り添う器をかたちにしています。

体験では、実際の工房で電動ろくろに向き合い、職人の手ほどきのもと、土に触れ、世界に１つだけの器が生まれる瞬間に立ち会うことができます。

Echizen Pottery is one of Japan’s Six Ancient Kilns, representing one of the country’s most historic pottery traditions.
With a history spanning over 850 years, "Hōsai Kiln", located in Echizen Town—the birthplace of Echizen pottery—has been devoted to working with clay across two generations of a family of potters.

Using iron-rich clay native to Echizen, the kiln creates vessels that highlight its rustic strength and natural texture, balancing tradition with forms suited to contemporary living.

During the experience, participants work at an electric pottery wheel inside the actual studio, guided by a skilled artisan. By shaping the clay with their own hands, they witness the moment a one-of-a-kind vessel comes to life.

越前和紙の職人に学ぶ、伝統技法「ひっかけ」体験

創業80余年「やなせ和紙」は、越前に息づく手漉き和紙の工房。
2025年にユネスコ無形文化遺産に追加登録が決定した越前鳥の子紙の技術を受け継ぎ、
「本鳥の子紙」や「雲肌」と呼ばれる襖紙を一枚ずつ丁寧に漉き上げています。

「ひっかけ」と呼ばれる伝統技法は異なる原料を金型に引っ掛け、模様を生み出します。素材には、お札にも使われる三椏。艶やかでなめらかな質感に、繊細な表情が浮かび上がります。
体験では、お気に入りの金型を選び、自らの手で和紙を漉くことができます。

Founded more than 80 years ago, ”Yanase Washi” is a hand-crafted washi paper workshop rooted in the traditions of Echizen.
Carrying on the techniques of Echizen "Torinoko Washi paper"—which is scheduled to be additionally inscribed on the UNESCO Intangible Cultural Heritage list in 2025—the workshop carefully produces fusuma sliding-door paper such as "Hon-Torinoko-shi" and patterned sheets known as "Kumohada", each made individually by hand.

A traditional technique called "Hikkake" creates distinctive patterns by hooking different paper fibers onto metal molds. The material used is mitsumata, a plant fiber also used for Japanese banknotes, giving the paper a glossy, smooth texture with delicate visual expression. During the workshop experience, participants can select their favorite mold and create their own handmade washi paper.

老舗漆器の職人に学ぶ、お椀塗り体験

約1500年の歴史を受け継ぐ、越前漆器。
創業約100年の歴史を持つ老舗漆器店「錦古里漆器店」は、その技を今に伝える工房です。

ベテランの漆職人である錦古里兄弟が、弟・正二さんが下地と中塗りを、兄・正孝さんが上塗りを担い、分業の美によって一つの作品を仕上げています。

体験では、下地の整ったお椀に、漆を静かに重ねていきます。正孝さんの指導のもと、刷毛の運びを学びながら、自らの手で“塗り”の奥行きに触れる時間。黒や朱に加え、緑や青といった彩りも選ぶことができます。

Echizen lacquerware carries on a tradition spanning approximately 1,500 years.
”Kinkori Shikkiten”, a long-established lacquerware workshop with nearly 100 years of history, is a place where these techniques continue to be preserved and passed down today.

The workshop is run by the veteran lacquer artisans, the Kinkori brothers. Through a refined division of labor, the younger brother, Shoji, is responsible for the base and intermediate coatings, while the elder brother, Masataka, applies the final finishing layer, together completing each piece through collaborative craftsmanship.

During the experience, participants gently layer lacquer onto a bowl that has already been prepared with a base coating. Under Masataka’s guidance, you will learn how to handle the brush while experiencing the depth and subtlety of lacquer application with your own hands. In addition to classic black and vermilion, colors such as green and blue are also available to choose from.

越前打刃物は、700年の歴史を持つ伝統工芸で、その起源は京都の刀匠・千代鶴国安が越前市で農民のために鎌を作ったことに由来します。この伝統を受け継ぐ龍泉刃物では、会長・増谷浩司氏の指導のもと、刃物工房の見学や包丁の研ぎ、磨き、柄付けを体験し、自分だけのオリジナル包丁を作ることができます。職人の技に触れながら、越前打刃物の魅力を堪能できる貴重な体験です。

Echizen bladsmith "Ryusen Hamono" Original Knife-Making Experience

Echizen Uchihamono, which has a history of 700 years, is said to have originated when the Kyoto swordsmith Chiyozuru Kuniyasu arrived in Echizen City in search of good quality water for sword making, and made sickles for the nearby farmers.
Inheriting this tradition, the company develops handmade products with a focus on handcraftsmanship.
During this experience, Koji Masutani, chairman of Ryusen Cutlery, will give a tour of the cutlery workshop.
The workshop will also provide support in sharpening, polishing, and attaching the handle of the kitchen knife.

Echizen is the oldest lacquerware production area in Japan.Lacquerware production has been handed down for a long time because of the wet climate and the detailed division of labor that has been established in Echizen.
Maki-e is a decoration in which a pattern is drawn on the lacquered surface by applying lacquer to a brush. The most outstanding feature of this technique is the unique luster it produces, called “Hira-migaki maki-e.” In this experience, traditional craftsman and maki-e lacquerware artist Masanobu Komamoto will carefully assist customers to create one-of-a-kind special Echizen lacquerware bowls. Original designs can also be drawn.

作陶歴40年。老練ながら、口にするのは柔らかい言葉の数々です。「越前の土は扱いやすくて、今でも助けてもらってる」「動物も作るけど、純真無垢に作る子どもには勝てないなぁ」「お客さんと話すのは楽しい。ひとりだと凝り固まっちゃうからさ」そう語る川岸さんが作るのは、厚みがあって軽い器。温もり感じる、食卓でも扱いやすい、まさに暮らし助かる器です。

He has been making pottery for 40 years. Despite being an old hand, he speaks softly.
"Echizen clay is easy to handle and still supports me in my work," says Mr. Kawagishi. He creates charming animal figures but admits, "I can't beat the pure and innocent creations of children." He loves talking with customers. "If I work alone, I get stuck in my own style," he shares. His thick, lightweight vessels bring warmth to any table, making them both beautiful and practical for everyday use.
