The kim-jang mat (김장매트) is a kimjang mat is a large, foldable, waterproof, and usually non-toxic polyethylene mat with raised edges. It is normally used to contain the mess and juices when preparing large batches of kimchi. It allows comfortably mixing cabbage and seasoning on the floor without staining or making a mess.
