Cayman Spirits Distillery began with just a couple of friends with an idea for recreating authentic, ocean-aged rum. They’ve come a long way since then, along with a talented team, an expanded distilling facility, and broad range of spirits to share.
Since the early 2000's Walker Romanica and Nelson Dilbert experimented, explored the ocean floor, and recreated ocean-aging of spirits. It took a lot of trial and error, fighting through some setbacks, and believing in their idea. But they finally got there. They discovered a deceptively elegant way to age rum on the ocean floor. The results were fantastic. So they created and set up the first-ever undersea rum maturation site.
In Autumn 2007,
Someone finds their hiding place. An unknown diver pulls up one of their casks and brings it to a local bar – their first improvised test audience.
The feedback was great, but they clearly need to find a better hiding place. So they search the ocean floor once again. They finally moved their reserves to the perfect site – an exact seven fathoms deep.
In May of 2008, Seven Fathoms Rum was launched. These 2 guys did it. Their first batch was ready.
In the Spring of 2009, they installed the new Christian Carl Pot Still. This still resembles the Mark V dive helmet.
Next in Spring of 2010, the Governor’s Reserve Coconut Rum, White Rum, and Gold Rum were launched.
In August of 2011, their first export of their Governor's Reserve stock was sent to the United Kingdom. Where apparently the Queen liked it so much.
In October of 2012, the Governor’s Reserve Banana Rum, Overproof Rum, Dark Rum, and Spiced Rum were launch. This was a big day for those rum drinkers. So then they began exporting the rum to the United States.
In June of 2013, their new distillery opens with a tasting room and production floor. Their new 5000 square foot distillery allows them to be able to keep up with worldwide demand of their rum. With this new facility, it allowed for them to open up tours into the distillery and show people how their rum is being made. Not to mention that they have a huge tasting room/souvenir shop.
The tour takes about 30-40 minutes through the distillery and shows people how rge rum is actually made. With some luck, you would be able to taste the rum straight from the copper still pot. I was lucky enough to try it and it was about 190 proof. When I say wow, I mean wow! At the end of your tour, you will be able to sample every flavor of rum they have. It was definitely worth the $12.00 US Dollars. So, if you are ever in Grand Cayman and are looking for something different to do other than going to the beach or scuba diving then this is for you. I can promise you that you won't be disappointed.
