In Morocco, we say that the tajine is the heart of the house. It’s not just food — it’s a moment we share with family, friends, and even guests who visit our country for the first time.

A tajine is cooked slowly in a clay pot over low heat. Little by little, the spices, the olive oil, the meat, and the vegetables mix together and make a flavor you can’t find anywhere else in the world. Every region has its own style — with lemon and olives, sweet dried fruits, or simple home flavors like our mothers cook.
