This sandwich has always been a surprise favorite among guests and you can make it at home. If you don’t have fresh you can use tinned just do a light rinse and adjust the salt.

The ultimate in Moroccan street food, this fish sandwich puts all others to shame. So simple, so good.

This week we were able to donate 2,500 dirham to families that are in need at this time. To our past guests that have met our vendors, we are making regular phone calls to check in on them and assist when and where possible.

To those that chose to take a gift certificate for a future tour instead of a refund - we have taken a portion of each of these certificates that we've put into a fund that we are using to distribute financial aid as needed to help get through this time.

While the Moroccan government has designated funds that should help people, many work in the informal economy and financial aid has been very slow to reach them, and many need it now.

We will continue to do what we can to help everyone get through this period.

In the meantime we're also going to start sharing here more. Some thoughts as well as recipes that you can make to bring Marrakech (and Morocco) to your home!
