Mexico City.
The city where food is known to be abundant. But what is often overlooked in this city, is the traditional vegan cuisine and that is our focus on our vegan tour.
We keep it as authentic and neutral as possible within areas that are, let's say, non mainstream.

As much as we can, we avoid the main proteins you might usually find in the vegan industry, like soy, seitan or isolated vegetable protein. Instead we focus on ingredients that are plant based (as traditional Mexican food is) as well as the people behind the tours. On top of all of that, you will be guided by a passionate local who has been vegan for almost a decade.

Let Carlos show you the delicious details that you might have never thought or seen to be real traditional Mexican.

Meet Carlos, the Apron Man.

My first food experience was in the Yucatan peninsula, along with friends of mine (Claudia and Beto).

Originally, the idea was to offer something different to tourists rather than just your usual lunch at a restaurant. This is where the true authentic flavours of Mexico are lost.

It suddenly became something else. It became more about plant based activism.

Why?

The traditional Yucatecan diet is based on animal proteins.
This is where the shift was able to come in with the help of tourism.

As a plant based enthusiast, my intention was to really show the flavours that the ingredients and flavours that Yucatecans have forgotten about. Also integrating a more conscious diet.
It was in this initial step that I was shifting the food mindset of the local people also.
You can now have a taste of local Mexican cuisine in the food tours now in Mexico city.
Where you will really get a taste of the full flavours of Mexican cuisine.

Our culinary experiences are now available in Mexico City.
Every Saturday from 12pm.

We want to announce that Carlos, founder of Naj Kooben is going to be sharing something very special with you all. Something he is very passionate about, that is veganism and ingredients in Mexican cuisine.

Carlos’ passion enhances, as he discovers the magic behind each story and he can't wait to share this with you. You get to be the witness of this.

Carlos gives a fresh perspective to the vegan side of Mexico city, the part of Mexico that is still yet to be completely explored. And as a local himself from this chaotic but beautiful city, he also knows that it is easy to sometimes lose track of the simple things you might come across in your everyday life.

Carlos is waiting for you so he can share his intimate knowledge about his favourite places in the city with you. Secret spots that only a local will know.
Spots that most will walk by.
But as we all know. These are the best places to eat at.
Let Carlos share this with you, as you will see it through his lens. The lens of a local Mexican where you will taste the flavours of the true Mexico.

Welcome to this new chapter of Naj kooben within Mexico City. Welcome to the journey of exploring the vegan side of Mexico with a passionate, experienced, local guide. Carlos.

And you cannot forget about the tortilla.
Come and learn how to make them from scratch. That itself is a skill on its own.

How will they turn out?
