Yesterday I made a bolognese, a béchamel, and fried up some eggplant. Then saw I had some leftover pasta sheets in the freezer. So I put the eggplant in the fridge. Defrosted the pasta, cut it to fit the pan and made a lasagne with tge bolognese, bechamel and ton of grated locatelli/parmigiano. With a crunchy salad vinaigrette it was the perfect chop-chop. Tonight I’ll do something with the fried eggplant… I just don’t know what. 🤔

Last night’s chop-chop made a damn good brekky. Who need eggs when there’s carnitas y arroz amarillo in da howse? Yeah, I’m not a traditional breffist type of guy…and my charnitas (charred edge carnitas) kicked ass last night but their flavor is even better today. Dayummm!
