They say the best tacos are the ones you grew up eating. For those of us at CTH who grew up in Tijuana, this has been our go-to.

Everything a traditional taqueria needs. Mesquite burning for that unmistakable smoky asador flavor. A tortillera making pillowy tortillas by hand. And a taquero who for more than 37 years has been the taquero de confianza for your friends and family.

The taco: classic carne asada, cebolla, cilantro, salsa. And that generous dollop of guacamole that every Tijuanense can spot from across the room.

For starters, the amiable Don Chuy and his brother have been serving some of San Luis Potosí’s best tacos and gorditas for 40 years.

Tacos or gorditas? The correct answer is both.

Pick your filling—chicharrón, carne deshebrada, huevo, rajas, papas, frijoles, or queso.

We ran through them all, and all are top-notch. But their chicharron might be the best we’ve ever tried!

The best part? Gorditas y Tacos La Guerrero has a literal pitcher of their amazing salsa on each table, ready to drown whatever delicious combo you go with. In a quick weekend getaway to San Luis Potosí, we went twice!

Don’t forget to wash it all down with their thirst-quenching horchata.
