We aren’t looking for someone to sit in an office and look at spreadsheets all day. We need a hands-on Head Chef who loves being in the thick of service, leading from the front, and making sure every plate that leaves the kitchen is perfect.

What you’ll actually be doing
You’ll be the captain of the ship. This means:
Kitchen supplies
Leading the Line: You’ll be hands-on with prep and service across our entire menu—sushi, ramen, rice dishes, and hot tapas.
Building the Team: You’ll manage a mix of full-time and part-time chefs, keeping the energy positive, training them up, and making sure everyone is working in harmony.
The “Business” of Cooking: You’ll handle the rotas, order the stock, keep waste down, and help us come up with exciting new Japanese dishes.
Kitchen Standards: You’ll keep the kitchen organized, clean, and safe, making sure all the paperwork is up to date so we stay top-tier.
Is this you?
The Leader: You’ve got at least 1–2 years of experience in a leadership role in a kitchen. You know how to handle a busy service under pressure and keep your cool.
The Specialist (Optional): We’d love it if you have experience with Japanese cuisine (sushi/ramen), but if you’re a great chef who is a fast learner and a great leader, we still want to talk to you!
The Pro: You’re organized, reliable, and you understand that a clean kitchen is a happy kitchen. You should have (or be willing to get) your Food Hygiene Level 2 or 3.
Communication: You’re a great communicator who can resolve conflicts and keep the team motivated.
