STORE CLOSURE:
Our stores will be closed this ANZAC Day, Friday 25 April, and also on Saturday 26 April, as we pause to honour the men and women—past and present—who have served our country.

In tribute, we’re sharing a cherished recipe from our lovely Membership & Services Manager, Lizzie Redfern.

ANZAC Biscuits were originally sent to soldiers overseas by wives and women’s groups, chosen for their long shelf life during naval transport. Today, they remain a thoughtful homemade gift—easy to stack, tie with ribbon, and share with someone special.

Lizzie says, "I like to serve the humble ANZAC Biscuit with a sprig or two of rosemary, the herb of remembrance and friendship."

Lizzie’s ANZAC Biscuit Recipe:

1 cup each of wholegrain rolled oats, flour, coconut, and brown sugar
¼ cup golden syrup
125g butter
2 tbsp boiling water
½ tsp baking soda

Preheat your oven to 160°C (fan bake).
Combine flour, oats, sugar, and coconut in a mixing bowl.
Gently heat the butter, golden syrup, and water. Stir in the baking soda, then mix into the dry ingredients.
Roll into balls, flatten on a lined tray, and bake for 15 minutes.
Cool on the tray for that perfect crisp finish.

Our Ruralco Golf Classic, held last Friday at the Tinwald Golf Course, was a great success. ⛳
We had a great turn out, with a generous amount of funds raised for Mid Canterbury Rural Support Trust.
