A Fiji favourite of mine 🐟

Kokoda (pronounced koh-kohndah) is a refreshing Fijian raw fish salad similar to ceviche.

Ingredients
Fish: 500g fresh, firm white fish fillets (e.g., Walu, Mahi Mahi, snapper, or sea bass), cubed
1 cup fresh lemon or lime juice (enough to cover the fish)
1 cup thick coconut cream
1 small red onion (finely diced)
1-2 tomatoes (deseeded and diced)
1-2 fresh chilies (finely chopped)
1 spring onion (sliced)
Salt and white pepper to taste
Optional finely diced cucumber

Marinate the Fish: Place cubed fish in a non-metal bowl and cover with lime juice. Chill in the refrigerator for 2–6 hours, or until the fish turns opaque and firm.

Drain the citrus juice completely from the fish.

Mix Ingredients: Add the diced onion, tomato, chili, spring onion, and herbs (if using) to the fish.

Add Coconut Cream: Pour in the coconut cream, mix well, and season with salt and pepper.

Chill and Serve: Refrigerate for another 15–30 minutes before serving.

Traditionally served in a halved coconut shell or with lettuce cups

I was lucky enough to do an inspection on Crystal Serenity while she was docked in Timaru yesterday. A small ship with a maximum of 740 passengers and all outside cabins so ever cabin has a sea view. Serenity has numerous eateries and entertainment onboard to suit everyone.
