Thats right! Vermouth and tacos! Join us from 6pm on Thursday 3 September for a Vemouth and Aperitivo masterclass where Known Unknown winemaker Jules van Costello will teach you how to serve vermouth three different ways which will be paired by tacos from the Tacoteca kitchen!

Introducing Amaro #1, our very first Amaro! We gave guests to Aperitivo Aotearoa a little taste of this in both Auckland and Welington and it was an abosolute hit... And now it's finally ready to send out the door!

Amaro #1 is a new-world vin amaro (that is to say it has a wine base) flavoured with oranges and figs from our garden and a hint of Iranian saffron. It uses cinchona bark and rhubarb for bitterness and is bottled at 18% ABV so it's much less wine-like, more aggressively bitter and a little bit boozier than our vermouth!

It is truly delicious both as an aperitif with a splash of soda or tonic and a orange wedge or as a digestif, served ice cold at the end of a meal.

Our first orders of ABC (Aotearoa Bitters Company) bitters ship today!

We’re launching with two delicious products:
Classic Orange Bitters which will add a citrus pop to any drink and is made with Taranaki-grown oranges and angelica with a hint of aromatic cardamom for lift!

Cacao & Vanilla Bitters which adds richness and complexity to any drink and is made with MALVA Chocolate cacao, Heilala vanilla, a touch of cinnamon for warmth and Taranaki-grown angelica for bitterness.

Together these join our phenomenal Negroni as our core products but don’t worry, we have some seasonal bitters right around the corner!

Look for these at great bars, bottle stores and restaurants.

Listen up Auckland! Known Unknown and Tacoteca are teaming up to present a super-fun night of vermouth (and amaro) and tacos called (you guessed it) Vermut y Tacos!

Come join us on Thursday 3 September from 6pm for a casual tasting hosted by Known Unknown Winemaker Jules van Costello and acclaimed sommelier and Tacoteca owner Edmundo Farrera. You will be guided through three of Known Unknown's signature vermouth and amaro served in a range of styles. These will be accompanied by two tacos from the stunning Tacoteca kitchen. Feel free to stay on after the tasting, Jules and 'Mundo will be pouring wine and slinging tacos all night.

Reintroducing Bloody Vermouth!

Launched at Aperitivo Aotearoa, we are now rocking the 5th batch of our signature vermouth, named for its primary botanical - blood orange! As well as blood orange it has notes of cardamom, saffron and (of course) wormwood that we now grow ourselves. It's amazing in a Negroni but is also great on it's own or with a mixer!

Whats different?

First off, our base wine has changed and now Bloody Vermouth is made with organically grown Bridge Pa Syrah and Cab Franc from the exceptional 2024 vintage. A change to a warmer, dryer vintage means more oomph, fruit weight and natural tannins from the wine.

Next, to balance out the richer base wine we've increased the sweetness of Bloody Vermouth ever so slightly. Don't worry though, it still has about 1/2 the sugar of most other sweet red vermouths giving you more control over the sweetness of any drink you use it in.

And finally, Bloody Vermouth is now made in 225l batches and aged in barrel with the botanicals before release. This allows for more complexity, flavour integration and depth.
