Every year we test our sea salt for minerality. It's why we can claim to be NZ's most mineral rich sea salt. Its a function of place and method. There's no processing of our sea salt. No washing, bleaching or boiling.

It is just the wonderful natural minerals present in the ocean that give Opito Bay sea salt its distinctive flavour.

This year we tried something different we tested samples of both our summer sea salt and our winter sea salt.

The differences were extraordinary...I'll publish the data soon on the blog.
