We literally eat Pho at least once a week. Just made this morning for the family to enjoy for lunch.

Save my recipe for Chicken Pho also known as Vietnamese Chicken Noodle Soup. The ingredients are three chicken leg quarters or one whole chicken, large pot of water, two or three small onions, four ounces of ginger, 2 ounces of rock sugar, 2 tbsp fish sauce, 2 tsp salt ( I always adjust amount according to my taste preference with salt and fish sauce) and in my spice bag is fennel seeds, coriander seeds, Star anise, cinnamon stick and cardamom. Bring heat to high, cover with a lid, bring down to medium low and cook for 45 to an hour minutes. Adding quail eggs is optional, but highly recommended if you can find it. Cook rice noodles in boiling water for 45 seconds and rinse under cold water immediately. Garnish with cilantro, green onions, a fresh squeeze of lime juice. For condiments add chili garlic oil, hoisin and sriracha.
