Galanggal , a must in Asian cooking in the Indoc china peninsula used to create flavorful curries /satisfying sour soup and stir fries , with citrusy lemony flavor , galanggal creates a distinct taste and aroma when infused with any kind of food. Here in the Philippines it is not commonly used , I wonder why, have you tried using galanggal in your food ? What type of Filipino food uses this neglected ingredient in Filipino cuisine?
