A traditional Filipino Bibingka is made with rice flour and coconut milk or water. Other ingredients can vary greatly, but the most common ingredients are eggs and milk. Mochi Butter or Filipino Bibingka Recipe:
Preheat oven to 350 degrees
Ingredients:
1 box Mochiko (equals to 1 pound)
1 tsp baking powder
1 1/4 cups sugar
1 cup sweetened coconut flakes
plus 1/2 cup extra for browning for topping
1 tsp vanilla
5 eggs
2 1/2 cups whole milk
1 stick melted butter
plus extra for buttering dish
Mix all the dry ingredients. Mix all the wet ingredients. Combine.
Place in a 9x13 buttered baking dish.
Place in preheated oven for 1 hour
Extra 10 minutes if you like crispy edges.
Place the 1/2 cup sweetened coconut flakes in a frying pan and heat on low-medium heat for 5 minutes. Stirring constantly and let it golden brown.
Once cake is done sprinkle the toasted coconut on top.
