Annie Entendez, 70, one of the oldest makers of the traditional Sayongsong delicacy in Mainit, Surigao del Norte prepares freshly made rice cakes using a decades-old recipe on Sunday.
A retired teacher, Entendez has been crafting Sayongsong for nearly 50 years after learning the traditional method from her aunt.
The delicacy, made from glutinous rice and coconut milk and wrapped in young banana leaves, is cooked for about 25 minutes using a traditional wood-fired method, helping preserve a cherished culinary heritage of the town.
