Chicken biryani / boneless chicken biryani serving of 15 persons
Ingredients:
Air fried onions 1 cup
Yogurt 1/2 cup
Mint leaves 1/4 cup
Ginger garlic paste 2 table sp
Green pepper 1 tea sp
Tomato paste 1 cup
Salt 2 table sp
Paprika 2 table sp
Corriander powder 2 table sp
Haldi 1/2 table sp
Dried fenugreek leaves 1 tea sp
Cumin powder 1 table sp
Shan biryani masala 1 table sp / according to your taste
Boneless Chicken 4 pounds
Step 2
Cloves 4
Whole black pepper 1 tea sp
Taiz patta 2
Mint leaves few
Zeera 1 tea sp
Rice 4 cups
Step 3:
Curry
Oil 1 cup
Potatoes 3 medium size
Marinated chicken
Garnish:
Lemons 2 slices
Mint leaves
Green chillies
Air fried onions
Yellow food color

Procedure:
Step 1:
Marination:
Mix onions, green chillies, mint leaves, ginger garlic paste and all powder ed spices well. Marinate wash and drained chicken In it. Refrigerate over night.
Step 2:
Boiled rice :
Let's boil rice.
Add cloves, taiz patta, whole black pepper, zeera and salt in water. Add some mint leaves and add rice. Cook rice 75 - 80% at this point.
Drain rice and set aside.
Step 3:
Biryani masala:
Let's prepare biryani masala curry now.
Add oil and fry potatoes for 5 - 7 minutes in it.
When they get slightly golden add marinated chicken in it.
I prepared chicken in 2 batches for ease.
Cook 15 min at high flame the cover for 10 minutes till potatoes and chicken is fully cooked.
Set side.
Step 4:
Layering
Add some oil in bottom of pan and add a layer of chicken. Add a layer of rice on it. Add fried onions, green chillies and again add chicken layer and rice layer.
Garnish with mint, onions, chilies and add yellow/ orange food color.
Put on dum on low flame for 10 minutes.
Delicious and everyone's favorite chicken biryani is ready. Serve with mint raita. Serve hot.

Cashews chicken Karahi / white Chicken karahi :
Ingredients:
Onions 2 cups
Cashews 1/4 cup
Cloves 6
Black pepper 1/2 tea sp
Garlic 1 tea sp
Chicken boneless 2 pounds
Pink salt 1 tea sp
White pepper powder 1 tea sp
Homemade garam masala 1/2 tea sp
Corriander powder 1 tea sp
Yogurt 1/2 cup
Water as needed
Garnish:
Kasoori methi
Butter or cream
Green chillies

Procedure:
Fry onions till golden brown and cashews.
Slightly fry them and let them cool down. Make a paste of onions and cashews and set aside.
In the same pan, add minced garlic, black pepper and Cloves.
Add washed and drained chicken boneless thigh meat.
Cook on high flame for 10 minutes till it changes its color and to remove raw smell. Add onions Cashews paste in it.
Add powder spices and then add yogurt.
Add water and let it Simmer on medium flame for 10 minutes with lid on.
Delicious creamy white chicken karahi is ready!
Garnish with butter, Kasoori methi & green chillies.
Serve with white rice or fresh home-made chappati.

Punjabi yakhni chicken pulao / Punjabi pulao / chicken pulao:
Ingredients:
Taiz patta 2
Cinnamon sticks 2
Cloves 7
Green cardamon 5
Black pepper 1 tea sp
Saunf 1 tea sp
Dry whole corrrider 1 tea sp
Zeera 1 tea sp
Ginger 2 inch
Garlic 5 cloves
Salt 1 tea sp
Water 4 cups
Chicken 2 pounds
Oil 1/2 cup
Onion 1 large
Tomato 1 large
Ginger garlic paste 1 tea sp
Salt 1 tea sp
Rice 3 cups
Green chillies few
Home made garam masala 1/4 teaspoon

Procedure:
Add chicken, ginger, garlic, water, salt & all whole spices in a pan. Cover it and let it cook for 15 minutes at high flame.
In a separate pan, add oil and fry onions till brown in color.
Separate chicken pieces from yakhni and strain yakhni water to remove all whole spices and ginger garlic. We will use this water for rice.
Set aside.
Add wash and drained chicken In pan, and fry with onions till it changes its color. Add tomatoes, salt, ginger garlic paste.
Add yakhni water and let it boil.
Add washed and soaked rice and cover it. Let it cook at high flame for 10 minutes.
Add homemade garam masala on top & keep it on dum for 10 minutes at low flame.
Garnish with green chillies.
Delicious flavourful Punjabi chicken pulao is ready.
Serve hot with fresh salad and mint raita.

Silkie chicken karahi / RAREST CHICKEN karahi cooked to Perfection
Ingredients:
Silkie chicken 2 pounds (1 whole chicken)
Marination:
Yogurt 1 cup
Salt 1/2 cup
Garlic 1 tea sp
Salt 1/2 tea sp
Paprika 1 tea sp
Coriander powder 1 tea sp
Cumin powder 1 tea sp
Home made garam masala 1 tea sp
Masala for Karahi:
Avocado oil 1/2 cup
Onion 1 large
Ginger 2-inch grounded
Chopped garlic 1 tea sp
Salt 1/2 tea sp
Black pepper 1/2 tea sp
Coconut cream 1 cup
Tomato paste 3 table sp

Procedure:
Wash and drain the chicken.
Add all powdered spices, and ginger garlic paste in yogurt & marinate the chicken. Keep it in the refrigerator for 2 hours.
Now let's prepare masala.
Sauté onions in Avocado oil,
Add freshly ground ginger garlic to it.
Add spices.
Add tomato paste and coconut cream.
Add 1 cup water and bhoonify masala.
Add marinated chicken and let it cook at high flame for 10 minutes.
Cook it on a medium flame for 40 minutes. Let it simmer till oil comes on top.
Garnish with green chilies and coriander.
Delicious RAREST chicken is cooked to Perfection.

Fruit chat / Healthy & quick Fruit chat recipe / Fruit Chat in 3 minutes
Wash & dice all fruits of your choice.
I used,
Apple 1
Banana 2
Raspberries 1/2 cup
Blueberries 1/2 cup
Pomegranate 1/4 cup
Dry fruit [dried apricots]
Dry Fruit [pitted prunes]
Honey grapes 1/2 cup
You can add pears, oranges, guava, kiwi, mango, and peach too.
Sprinkle chat masala 1/2 tea sp.
Pour 2 table sp of homemade Plum tamarind chutney to take Fruit chaat to next level.
Mouth-watering & fulfilling Fruit Chat is ready to serve.

Complete Recipe:
Teriyaki chicken vegetables with rice / Chinese stir fry veggies with Rice
Ingredients:
Chicken 2 pound
Marination
Salt 1 tea sp
Black pepper 1 tea sp
Soy sauce 1 tea sp
Ketchup 1 tea sp
Ginger garlic paste 1 tea sp
Carrots 1/2 cup
Brussels sprouts 1 cup
Broccoli 1 cup
Bell peppers [green & orange] 1 cup
Onions (optional)
Salt & pepper to taste
For sauce:
Chang's teriyaki sauce 3 table sp
Oyster sauce 2 table sp
Soy sauce 3 table sp
Brown sugar 4 table sp
Wild Honey 1 table sp
Red crushed pepper 1 tea sp
Procedure:
Marinate chicken and refrigerate overnight.
Next day cook Chicken in olive oil at high flame.
It will take almost 15 minutes to fully cook the marinated chicken.
Dish out Chicken on a plate.
Sauté all vegetables in 1 tea sp Oil & sprinkle salt & pepper in the same pan.
Prepare sauce & add red crushed pepper.
Mix in sauté vegetables and chicken in sauce & cook for 5 minutes.
Serve hot with rice.

Complete Recipe;
Crispy Fried Chicken / KFC style crispy chicken fool proof recipe:
Ingredients:
Chicken boneless 5 pound
Salt 2 tea sp
Black pepper 2 tea sp
Paprika 2 tea sp
Ginger garlic paste 3 tea sp
Soysauce 3 table sp
Jalapeño spicy Kechup 3 table sp
Eggs 4
All purpose flour
Bread Crumbs
Oil for frying
Procedure:
Wash & drain boneless Chicken with vinegar & cold water.
Mix all spices, soysauce & kechup thoroughly.
Refrigerate overnight.
Next day, roll all marinated chicken pieces in all purpose flour. Coat in egg & layer with bread Crumbs.
Heat oil on high flame & fry chicken for 8 to 10 minutes on medium heat.
Remove fried chicken on wire rack to keep it crispy.
Wire rack doesn't let chicken soggy.
Serve hot with sauce of your choice.

Quick and easy chicken koftey recipe:
Ingredients:
Onion 2 medium size
Chicken boneless 4 pounds
Garlic cloves 10
Green chilies 10
Salt 3 tea sp
Red pepper 2 tea sp
Corriander powder 4 tea sp
Cumin powder 2 tea sp
Home made fragrant garam masala 1 tea sp
Slight roasted besan 4 table sp
Or roasted chick pea 4 table sp

For masala:
Cinnamon stick 2
Green cardamon 3
Ginger garlic paste 2 table sp
Salt 1/2 tea sp
Paprika 1/2 tea sp
Corriamder powder 1/2 tea sp
Haldi 1/2 tea sp
Tomato paste 2 cups

Procedure:
Chop onion and fry in oil on medium flame for making masala.
Now let's prepare chicken for making kofta.
Add garlic green chilies, washed and drained chicken, and all powdered masalas in chopper.
Blend and make smooth consistency.
You can add slightly roasted besan or dry roasted chick peas for nice consistency.
Make medium-sized koftey balls.
Fry on low flame for 10 minutes till golden brown. Set aside.
Make masala by frying onions. Add whole spices, ginger garlic paste, tomato paste and fry till oil separates.
Add koftey and add 1 cup water. Let it simmer for 15 to 20 minutes on low to med flame.
Garnish with fresh corriander, fresh green chillies & juvenile cut ginger pieces.
Enjoy with rice or fresh chappati.

Chicken shami kabab in Instant Pot / Instant Pot recipes / Ramadan Special Series :
Ingredients:
Chana daal 2.5 cups
Chicken 3 pounds
Garlic cloves 8
Ginger sticks 4 inch
Onion 2
Salt 1 table sp
Red pepper 1 table sp
Zeera 1 table sp
Coriander powder 1 table sp
Home-made garam masala 1 tea sp
Water 1/2 cup
Fresh parsley 1 handful
Green chilies 6

Procedure:
Soak Chana daal overnight. Wash and rinse and add in the instant pot.
Wash and drain chicken and add to pot.
Add all spices, onion, ginger, and garlic.
Put on high pressure for 12 minutes.
It will be fully cooked.
Natural pressure release (NPR) Instant pot and blend the mixture with a hand blender.
Add chopped parsley and green chilies.
Cool down and make medium-sized kababs.
Freeze kababs and store them in a zip-loc bag.
These kababs can be stored for 1 month.

Ingredients:
Corriander seeds / sabut dhaniya 4 tea sp
Zeera 1 tea sp
Saunf 1 tea sp
Dar cheeni 2 sticks
Black pepper corns 1 tea sp
Ajwain 1/2 tea sp
White salt 1/2 tea sp
Aam choor powder 1/2 tea sp
Ginger powder 1/2 tea sp
Black salt 1/2 tea sp
Sugar 1 tea sp
Red pepper 1/2 tea sp
Procedure:
Mix & dry roast all whole spices & powder spices on low heat.
Cool down & ground into powder form.
Fragrant home-made chat masala is ready.
Save in air tight jar.
Sprinkle on fruit chats, dahi barey, Chana chaat.

Procedure:
Dry roast all whole spices on low heat.
Dry roast for 10 minutes.
Cool down.
